    Pumpkin Pie Chaffles Recipe

    Have you jumped on the chaffle train? If not, you’re missing out on some seriously good food. What is a chaffle? It’s a keto friendly version of a waffle made with eggs and cheese. And there are so many different variety of foods you can make with them from any flavor chaffle to sandwiches and more.

    To make the chaffles, you’ll need a waffle maker. I like the Dash Mini Waffle Maker because it’s affordable, doesn’t take up much space and easy to use. They have a variety of fun colors to choose from and has great reviews.

    Can you make chaffles ahead of time?

    Yes, you can! You can always create a big batch of this recipe, eat some and save the rest for later by putting it in a freezer bag and store in freezer. When you’re ready to eat just take out of the freezer and toast them in the toaster. Add some keto fluffy whipped cream to the top and they taste just as good as the day before.

    What does a chaffle taste like?

    When you hear that the ingredients are cheese and eggs you are probably thinking that it will not be crispy and will taste eggy but it’s the complete opposite. They are crispy and taste like waffles. Try them and you’ll see what I mean by how good they are.

    Pumpkin Pie Chaffles Ingredients

    2 tablespoon coconut flour
    1 teaspoon baking powder
    1 teaspoon cinnamon
    ⅛ teaspoon nutmeg
    2 large eggs
    2 tablespoons pureed pumpkin
    ½ teaspoon vanilla extract
    ¾ cup fresh mozzarella cheese, shredded
    ¼ cup mild cheddar cheese

    Whipped Cream Topping Ingredients

    ½ teaspoon vanilla extract
    1 cup whipping cream
    4-ounces cream cheese, softened

    How to Make Pumpkin Pie Chaffles

    Preheat the waffle maker.

    In a large mixing bowl, add egg and beat until frothy. Add vanilla, pumpkin, and cheese, and beat until well combined.

    In a small mixing bowl, whisk together flour, baking powder, and pumpkin pie spice.

    Add dry ingredients to egg mixture and mix until just combined.

    Spray waffle maker with cooking spray. Pour the batter into the waffle maker on medium, high heat and cook until starting to brown on the outside – about 4 minutes. If the batter is still sticky you may need to cook it a bit longer.

    Whipped Cream Topping: With a stand mixer or hand mixer, beat cream cheese until smooth, then add in whipping cream and vanilla and beat until light and fluffy.
