Low Carb Alfredo Sauce

low-carb-alfredo-sauceBefore Keto I was a pasta-holic having several times a week with Alfredo sauce. Now that my lifestyle has changed so has the foods but that doesn’t mean you still can’t enjoy pasta and sauce. It’s just tweaked a bit to follow a keto/low carb diet. I actually like it better than the heavy pasta I used to have before. You don’t feel sluggish and a little goes a long way.

This low carb Alfredo sauce is great over zoodles, chicken, steamed broccoli and shrimp. I suggest making this recipe on the same day as you’re cooking the rest of the food so it’s fresh and hot. Zoodles can be bought premade in the store of you can make them yourself by using a spiralizer. I like to make mine fresh and use the Paderno Spiralizer. It’s easy to use, inexpensive and mounts to your counter.

Serve immediately over zucchini spirals or anything else you wish to have Alfredo sauce on.

Note: If the sauce is too thick you can add more heavy cream to thin it out.
