Before Keto I was a pasta-holic having several times a week with Alfredo sauce. Now that my lifestyle has changed so has the foods but that doesn’t mean you still can’t enjoy pasta and sauce. It’s just tweaked a bit to follow a keto/low carb diet. I actually like it better than the heavy pasta I used to have before. You don’t feel sluggish and a little goes a long way.
This low carb Alfredo sauce is great over zoodles, chicken, steamed broccoli and shrimp. I suggest making this recipe on the same day as you’re cooking the rest of the food so it’s fresh and hot. Zoodles can be bought premade in the store of you can make them yourself by using a spiralizer. I like to make mine fresh and use the Paderno Spiralizer. It’s easy to use, inexpensive and mounts to your counter.
Low Carb Alfredo Sauce
Ingredients
¼ cup butter (I like to use Kerrygold butter)
1 tbsp minced garlic
2 cups heavy cream
4 oz grated Parmesan cheese
Black pepper to taste
Directions
Melt butter in a medium saucepan on medium heat.
Once butter is melted, add minced garlic and saute for 1 minute.
Add the heavy cream to the saucepan and bring to a shimmer.
Once it begins to thicken reduce heat a bit.
Reduce the heat to low and whisk in grated Parmesan cheese until cheese is melted and sauce is smooth.
Add black pepper to taste, stir and remove from burner.
Serve immediately over zucchini spirals or anything else you wish to have Alfredo sauce on.

Note: If the sauce is too thick you can add more heavy cream to thin it out.
