If you’re looking for a new idea for pizza night, try this Keto shrimp pesto pizza recipe. It’s made on fathead dough and topped with mozzarella cheese, pesto sauce, and shrimp. It’s easier than you think to make and a pizza the whole family will love.
We’ve been making this pizza for quite some time before I was on the ketogenic diet using a premade crust. Little did I know back then how bad that was for me and my family. Keto Shrimp Pesto Pizza
Ingredients
Fathead dough
¼ cup pesto sauce
8 oz frozen or fresh shrimp (tails off and deveined)
6 oz ball fresh mozzarella cheese
Directions
Preheat the oven to 425 degrees.
Make the Fathead dough. (recipe below)
Lay a piece of parchment paper down, add the dough to the top and then lay another piece of parchment paper on top of the dough.
Using a rolling pin, roll out the dough to form a pizza crust.
Take off the top parchment paper and leave the bottom one for the dough to set on and bake the dough for 7 minutes on a round pizza pan.
When finished baking, take the pizza crust out of the oven and set aside.
Turn down the oven temperature to 350 degrees.
Melt butter in a skillet over medium heat. Add shrimp and cook until almost done.
Spread the pesto sauce to the pizza crust.
Spread the shrimp throughout the crust on top of the pesto sauce.
Cut the mozzarella cheese into ½ inch slices.
Spread them around the top of the pizza.
Bake for 10 minutes.
Cut into slices and serve immediately.
Fathead Dough Recipe
Ingredients
1 ½ cups shredded mozzarella cheese
2 large eggs
⅓ cup coconut flour
2 tbsp cream cheese, cut in cubes
Directions
Preheat oven to 425 degrees.
Add mozzarella cheese and cream cheese in a bowl and microwave for 45 seconds. Stir. Put back in microwave for another 45 seconds.
Beat eggs and add to mozzarella and cream cheese plus add in coconut flour and mix.
Knead with hands until dough forms.
Lay a piece of parchment paper down, add the dough to the top and then lay another piece of parchment paper on top of the dough.

Bake for the dough for 7 minutes.
