I’ve been playing around in the kitchen to make Keto chicken tenders because my kids love chicken tenders so much. I finally nailed a good recipe that I have to share. It’s seriously so good that my kids request it at least once a week.
While you can take regular chicken breasts and cut them into tenders, I cheated and bought chicken tenderloins so I could skip a step of cutting them. I used the Ninja Foodi air fryer for these chicken tenders making them crispy and tender. You could bake them at 425 degrees for 25-30 which will also make them crispy.
Keto Air Fryer Chicken Tenders
Ingredients
1.5 -2 lbs Chicken Breasts or Chicken Tenderloins
1 cup Almond Flour
1 bag Original Pork Rinds, crushed
⅓ cup Italian Seasoning
⅓ Grated or Shredded Parmesan
3 Eggs
Directions
Wash and cut the chicken breasts into tenders. No cutting needed if you bought chicken tenderloins.
Using a food processor blend the pork rinds until they are like breadcrumbs. Add in Parmesan cheese and Italian seasoning and blend together with pork rinds.
In a separate bowl add the mixture from the food processor.
In another separate bowl add only the almond flour.
In a third separate bowl, add only the 3 eggs.
Lay out all 3 bowls in an assembly starting with almond flour, eggs and then seasoning blend.
Dip the chicken into the almond flour first, then the egg, and then the seasoning blend making sure each layer has coated the chicken.
Put it in the air fryer at 390 degrees for 16 minutes flipping them over after 8 minutes and continue cooking.
Pair with your favorite dipping sauce such as sugar-free ketchup, G Hughes sugar-free bbq sauce and more.
Store any leftovers in an airtight container in the fridge for 2-3 days.
