This Keto Chicken Parmesan is super easy to make and done in under 30 minutes. It’s a great dish for dinner that the whole family will love and perfect for busy nights. Covered with marinara sauce and gooey cheese makes this delish!
Keto Chicken Parmesan
Yields: 6 servings
Ingredients
3 chicken breasts – sliced in half
2 eggs
1 cup parmesan cheese, shredded
1 teaspoon dried basil
1 teaspoon dried parsley
¼ teaspoon salt
¼ teaspoon pepper
¾ cup low-carb marinara sauce
8 oz fresh mozzarella
Olive oil or cooking spray
Fresh parsley or basil to garnish
Directions
Preheat oven to 375 degrees F.
Place chicken breasts on a cutting board and using a sharp knife, slice in half lengthwise.
Beat the eggs in a wide shallow dish and set aside.
In a separate wide shallow dish, add the shredded parmesan cheese, dried herbs and salt and pepper. Stir to combine.
Dip each piece of chicken in egg to completely coat. Next, dredge chicken in parmesan cheese mixture.
Add olive oil or cooking spray to coat the bottom of a large skillet on medium-high heat.
Cook the chicken breasts for 3 minutes on each side and then place them in a 9×13” baking dish.
Add two tablespoons of marinara sauce to the top of each piece of chicken.
Slice the fresh mozzarella in thin slices and place a layer on each chicken breast.
Bake in the preheated oven for 15 minutes. Change the oven settings to broil on high for an additional 5 minutes, then remove from oven. Garnish with fresh parsley or basil and serve warm.
