Low Carb Salsa Verde Chicken

I love an easy meal idea especially when there’s not enough time to cook. You can let this low carb salsa verde dish cook itself while your away in a crock pot or prepare it quicker in an instant pot. It all depends on how much time you have. I find myself short on time so I usually cook the chicken in the instant pot so I can prepare this meal in about 20 minutes or less. 

We like to make this dish for tacos as we shred the chicken. If you just wanted a chicken dish, you can skip shredding the chicken and just have whole chicken breasts to serve over cauliflower rice.

Low Carb Salsa Verde Chicken

Ingredients

1.5 lbs skinless, boneless chicken
2 tbsp taco seasoning
1/2 Jar Salsa Verde
Salt to taste
Low carb tortillas (optional if you want to make tacos)

Sour Cream
Avocado
Red Hot
Shredded Cheese

Directions

To prepare the shredded chicken, cook it in either in a crock pot or instant pot.

If you cook the chicken in the crock pot add the chicken, taco seasoning, salsa verde, salt to taste and cook on low for 5 hours. 

If you cook the chicken in an instant pot, add the chicken, taco seasoning, salsa verde, salt to taste and cook for 12 minutes (thawed) or 15 minutes (frozen). 

When the chicken is cooked strain and shred with a fork. 

Scoop out the avocado and slice into long pieces.

Add the shredded chicken, shredded cheese and avocado to a platter. 

Preheat oven at 350 degrees.

Heat low carb tortillas in oven for about 3-5 minutes.

Use a low carb tortilla to load up shredded chicken, sour cream, shredded cheese and avocado.

  2. If you cook the chicken in the crock pot add the chicken, taco seasoning, salsa verde, salt and cook on low for 5 hours. 
  3. If you cook the chicken in an instant pot, add the chicken, taco seasoning, salsa verde, salt and cook for 12 minutes (thawed) or 15 minutes (frozen). 
  4. If you take the shortcut and buy a rotisserie chicken, shred the chicken with a fork and add add the chicken, taco seasoning, salsa verde, salt to a pan and cook on low heat for 5-7 minutes and mix together. 
  5. When the chicken is cooked shred with a fork. 
  6. Scoop out the avocado and slice into long pieces. 
  7. Add the shredded chicken, shredded cheese and avocado to a platter. 
  8. Preheat oven at 350 degrees.
  9. Heat low carb tortillas in oven for about 3-5 minutes.
  10. Use a low carb tortilla to load up shredded chicken, sour cream, shredded cheese and avocado.
