To prepare the shredded chicken, cook it in either in a crock pot, instant pot or take a shortcut and buy a rotisserie chicken.
If you cook the chicken in the crock pot add the chicken, taco seasoning, salsa verde, salt and cook on low for 5 hours.
If you cook the chicken in an instant pot, add the chicken, taco seasoning, salsa verde, salt and cook for 12 minutes (thawed) or 15 minutes (frozen).
If you take the shortcut and buy a rotisserie chicken, shred the chicken with a fork and add add the chicken, taco seasoning, salsa verde, salt to a pan and cook on low heat for 5-7 minutes and mix together.
When the chicken is cooked shred with a fork.
Scoop out the avocado and slice into long pieces.
Add the shredded chicken, shredded cheese and avocado to a platter.
Preheat oven at 350 degrees.
Heat low carb tortillas in oven for about 3-5 minutes.
Use a low carb tortilla to load up shredded chicken, sour cream, shredded cheese and avocado.
