Who says you can only have tacos on a Tuesday? No one!! If it was up to me I would have tacos for dinner all the time. They are my favorite especially these Keto Street Tacos that are low carb and delicious.
For this recipe we used low carb and keto friendly tortilla shells because I always fail at making cheese taco shells. I’m not sure what it is with them. I mean they are the easiest thing of placing a pile of cheese on a parchment paper and sticking it in the oven for 6 minutes on 375 degrees. But when I take them out to mold them it just doesn’t work out. I’m thinking it’s the cheese I use or possibly too much cheese at that. If you have any suggestions on what I’m doing wrong I would love to know. Enough of my fails an on to the recipe.
Keto Street Tacos
Ingredients
2 lbs shredded chicken
1 bag of shredded lettuce
1 bag of shredded or grated mild cheddar cheese
1 bag of cabbage with carrots
Low carb tortilla shells
Low carb salsa
Low carb cilantro lime avocado dressing
Directions
Prepare your shredded chicken either in a crockpot, instant pot, air fryer or stove top.
Shortcut: Buy premade shredded chicken in the deli or they have a really good one at Sam’s Club in the refrigerated section by the meats.
When the chicken is done cooking shred chicken with a fork or using a mixer.
Using a big enough plate make your arrangement of toppings with lettuce, cheese, cabbage, chicken, salsa and cilantro lime avocado dressing.
Use low carb tortilla wraps, lettuce, or cheese for shells.
Build your keto street tacos by piling on the toppings to your liking.
