Now that school is back in session it’s time to break out the easy meals for the busy nights. This Keto BBQ Chicken and Cheese Casserole is easy to make and most of it can be done before you get home from work or running errands for the day as the Crock-Pot does the work for you.
This dish has great flavor the whole family can enjoy and can be eat alone or with keto taco shells lettuce and sour cream. If you’re looking for a Crock-Pot, my favorite one is this Crock-Pot® 6.0-Quart Cook & Carry with Digital Timer. I like the digital timer cause I don’t have to guess what time I put the food in and know when I should take it out.
Keto BBQ Chicken and Cheese Casserole
Ingredients
2 lbs boneless skinless chicken breast
½ jar G Hughes sugar free Hickory smoked BBQ sauce
½ tsp garlic seasoning
½ bag Colby jack cheese
½ bag Taco Bell breakfast fiesta shredded cheese
12 pieces bacon, cooked and crumbled (I like to use microwave bacon, cooked in the microwave, cooled and then crumbled in hands)
¾ tsp parsley
salt and pepper to taste
Chicken rub
2 cubes chicken bouillon
1 cup water
Directions
Place boneless skinless chicken in slow cooker and shake chicken rub all over the chicken. Add salt, pepper, garlic seasoning, bouillon cubes and water to slow cooker. Cook on low for 6 hours or high for 3 hours.
Halfway through cooking turn over the chicken and shake the chicken rub on the other side.
Preheat oven to 350 degrees and spray an 8X8 baking dish with cooking spray.
Remove chicken from slow cooker and cut the chicken into larger pieces making sure not to shred it.
Place chicken in bottom of the 8X8 pan and drizzle with a little bit of juice from the crockpot.
Pour ½ jar of G Hughes sugar free Hickory smoked BBQ sauce over top of chicken.
Add the crumbled cooked bacon over top of the BBQ covered chicken.
Cover the entire casserole with the cheeses (½ bag of each).
Bake at 350 degrees for 15-20 minutes or until the cheese is melted and bubbling.
Add parsley on top of casserole, serve and enjoy!
