    Bald Eagle Cupcakes

    These Bald Eagle Cupcakes are adorable, easy to make, and perfect for Fourth of July or an Eagle Scout ceremony. Using a simple boxed cake mix and a handful of decorating ingredients, you can transform ordinary chocolate cupcakes into festive bald eagles.

    With America turning 250 this year and the bald eagle serving as our nation’s symbol of freedom and strength, it’s only fitting to celebrate with these cupcakes.

    I love how they turned out and can even be turned into a fun activity for the whole family to decorate.

    Eagle Cupcake Ingredients & Substitutions

    • Chocolate Box Cake Mix: Any brand works well for this recipe. You can also substitute vanilla or yellow cake mix if preferred.
    • Water, Oil, Eggs: The ingredients listed on the back of your cake mix box.
    • Chocolate Frosting: Store-bought frosting keeps this recipe quick and easy, but homemade chocolate buttercream works too.
    • Marshmallows: Regular-size marshmallows create the eagle’s head. Don’t recommend using mini or large size as it won’t be the right size for the head.
    • Honey: Helps the coconut flakes stick to the marshmallow head.
    • Coconut Flakes: Sweetened shredded coconut gives the eagle its white feathers.
    • Candy Eyes: Available in the baking aisle at most grocery stores or online.
    • Cashews: Used to to create the eagle’s beak. You can break off a piece of pretzel for the beak.

    How to Make Bald Eagle Cupcakes

    Prepare and bake cupcakes according to the directions on the box. Allow them to cool completely. Frost each cupcake generously with chocolate frosting.

    Place shredded coconut in a small bowl. Lightly coat the marshmallow with honey, then roll it in the coconut flakes until completely covered.

    Attach two candy eyes to the marshmallow using a small amount of honey. Insert a cashew between the eyes to create the eagle’s beak.

    Place the decorated marshmallow on top of the frosted cupcake. Serve immediately or refrigerate until ready to enjoy.

    • Allow cupcakes to cool completely before frosting to prevent melting.
    • Use a toothpick to hold the marshmallow as you coat it in coconut and decorate the face.
    • If you don’t want to use honey you can dip the marshmallow in melted white candy melts before coating it coconut.
