These Mini Pancakes Bites are perfect for on-the-go breakfasts or snacks! They are easy to make with just a few ingredients and customizable with your favorite mix ins.

If you’re looking for a quick and easy breakfast idea, this is the recipe to make. I love making a big batch of these pancakes muffins and keeping them on hand for busy mornings or an afternoon snacks.

The kids go crazy over them and don’t usually last long. What’s so great about these is that you can add your favorite mix ins such as fruits like blueberries or strawberries. Or you could add in chocolate chips, nuts, etc.

Dunk them in syrup or eat as is!

What are pancake bites?

Pancake bites are mini pancakes baked in a muffin tin and consumed in one bite. They’re easier to make than regular pancakes, freeze well and customizable.

What You Need

  • Pancake Mix: For this recipe we are using our homemade pancake mix but if you’re short on time you can use pre-made pancake mix (follow ingredients on box if using pre-made)
  • Milk
  • Egg
  • Melted Butter or Oil
  • Pancake Mix Ins
  • Toppings (optional): Syrup or whipped cream.

How to Make Pancake Bites

Prepare oven and muffin tins. Preheat oven to 350 degrees F. Spray muffin tins with cooking spray and set aside.

Prepare the pancake batter. In a bowl combine, pancake mix + additional ingredients listed on the box or from our pancake mix recipe. Fold in your favorite mix ins and let batter sit for two minutes.

Spoon & bake. Spoon the pancake batter into each muffin tin and bake for 10-12 minutes.

Serve & enjoy. Flip muffin tins over a platter. Serve with syrup or whipped cream.

Storing & Reheating

  • To Store: Allow to cool and store in an airtight container in the fridge for up to 4 days.
  • To Reheat: Place on a microwave safe dish and heat to desired temperature.
