What is a RumChata Malibu Lime and Soda?

The Rumchata Malibu Lime and Soda cocktail has been making waves on TikTok recently, and for good reason. This refreshing drink is perfect for sipping on a hot summer day or enjoying at a backyard BBQ with a flavor that’s reminiscent of a tropical vacation and tastes like key lime pie.

Tiktok has been a great source for drink recipes from the Corona Sunrise, Tequila Pickle Shots and Dirty Soda. It’s no surprise that this RumChata Colada cocktail has gained popularity on the app.

    Rumchata Malibu Colada

While this cocktail doesn’t actually have a real name some people call it a “Key Lime Colada”, “Lime in the Coconut” or the “Malibu Chata.” Whatever you choose to call it, one thing is for sure – it’s a delicious and easy drink to make at home with just four simple ingredients.

And if you want to know how to order one at the bar, ask for 1 part RumChata, 1 part Malibu rum, a splash of Rose’s lime juice, and top off with club soda.

Rumchata Malibu Lime and Soda Ingredients

    • Ice: This will be used to chill the drink and keep it cold.
    • Rumchata: This creamy liqueur is the star of the show, providing a smooth and sweet base for the cocktail.
    • Malibu Rum: This coconut-flavored rum adds a tropical twist to the drink.
    • Lime Cordial: I use Rose’s lime juice but you could also use any sweetened lime juice brand, NOT fresh lime juice.
    • Club Soda: This adds a refreshing fizz to the drink and helps balance out the sweetness. If you don’t have club soda, you can use seltzer or lemon lime soda.
    • Lime Slice: A lime slice makes for a simple and classic garnish for this cocktail.

How to Make a Chata Colada

Begin by filling a glass with ice – the more, the better to keep your drink cool on those hot summer days!

    rumchata in a glass

Pour in 1½ ounces each of RumChata and Malibu Coconut Rum into a cocktail shaker with some ice. Add in Rose’s lime juice and shake until combined and chilled.

    club soda in a glass

Strain into a glass and top it off with 4 ounces of club soda.

Give everything a gentle stir to mix all those tropical flavors together. Add a lime slice on the rim for garnish and enjoy.

    Variations and Helpful Tips

    • For a traditional piña colada flavor, add pineapple juice for a Rumchata Colada.
    • Can skip the lime juice and use equal parts of RumChata Limón and whipped vodka then top with club soda.
    • Add a graham cracker dust crust along the rim to enhance the key lime pie taste.
    • Do not substitute Rumchata for Bailey’s Irish Cream or sweetened lime juice with fresh lime juice. The result will be a curdled drink as fresh lime juice and Bailey’s tend to curdle when mixed with Rumchata.
