Make light and fluffy pancakes from scratch with this Homemade Pancake Mix. Make in advance and keep on hand for quick and easy pancakes!

    homemade pancake mix

Making pancakes with the family has become a tradition and something we do every Sunday. It’s a great time to get everyone together at the kitchen table for a big breakfast.

I love making a batch of this pancake mix ahead of time so we always have it for those special moments. If I really have time I’ll even add in a breakfast charcuterie board with a variety of breakfast options.

    how to make pancake mix

This pancake mix couldn’t be easier to make with just 5 pantry staple ingredients. I store mine is a large glass jar with lid but you could put it in just about anything that is airtight such as mason jars or something else with a lid.

To make you just add 3 ingredients to the mix, cook and voilà you have pancakes in about 15 minutes. So easy and delicious!

    Why You’ll Love This Recipe

    • Convenient: This homemade pancake mix can be made ahead of time and stored in an airtight container for up to 6 months. Simply scoop out the desired amount and add wet ingredients for a quick and easy breakfast.
    • Customizable: You can add in your favorite mix-ins like chocolate chips, blueberries, or chopped nuts to make each batch unique.
    • Budget-friendly: Making your own pancake mix is much cheaper than buying pre-made mixes from the store. Plus, you know exactly what ingredients are in your mix and can control the quality of those ingredients.

What You Need for the Pancake Mix

    • All-purpose flour
    • Granulated sugar
    • Baking powder
    • Baking soda
    • Salt

How to Make Homemade Pancake Mix

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

Store the mix in an airtight container in a cool, dry place for up to 6 months.

What You Need to Make Pancakes

    • Milk
    • Egg
    • Butter or oil
    pancake mix

    Pancake Variations

    • Whole Wheat Pancakes: Substitute the all-purpose flour for whole wheat flour for a healthier option. You might need to add more milk.
    • Gluten-Free Pancakes: Use a gluten-free flour blend in place of the all-purpose flour.
    • Egg-Free Pancakes: Substitute the egg for applesauce.
    • Dairy-Free Pancakes: Substitute the milk for a dairy-free option.

    How to Make the Pancakes

    1. In a bowl, whisk together the milk, egg, and melted butter or oil.
    2. Add in 1 cup of homemade pancake mix and stir until just combined (don’t overmix, lumps in the batter are okay).
    3. Heat a skillet or griddle over medium heat and lightly grease with butter or oil.
    4. Using a ladle or measuring cup, pour batter onto the skillet or griddle.
    5. Cook until bubbles form on the surface and the edges start to look set, then flip and cook for an additional minute or two on the other side.
    6. Serve with your favorite toppings such as whipped cream or sprinkles and enjoy!

Note: You can add different mix ins such as chocolate chips or blueberries to the batter before cooking.

    Recipe Tips

    • Use a light hand when mixing the batter to avoid over-mixing and tough pancakes.
    • If you want fluffier pancakes use buttermilk in place of milk.
    • If the batter is too thick, add a little bit of milk to thin it out. If it’s too thin, add a bit more mix.
    • Preheat the griddle or pan over medium-high heat. If it’s not hot enough, the pancakes will take longer to cook and may become tough.
