Mexican Sunset

Updated September 20, 2022

Take a beach vacation with a sip of this Mexican Sunset Cocktail. Tropical flavors of pineapple juice, peach schnapps, grenadine, amaretto and a splash of tequila. This fruity cocktail is one that will leave you wanting more.

Mexican Sunset

What I love about this is you have a layered look in the glass which elevates the look and is perfect for serving up at a party. Give this peach Bellini a try if you are a lover of all things peach. Another cocktail is a strawberry lemonade margarita which is tart, tangy, and sweet. We also love this Corona Sunrise, it is so quick to throw together.

Why You’ll Love This Mexican Sunset Recipe

  • Fruity Cocktail
  • Easy to Make
  • Layered Cocktail
  • Made with Tequila
  • Great for Summer

Ingredients Needed

Tequila – Buy your favorite brand or what is one sale.

Amaretto – I find that quality amaretto is key, otherwise the flavor can be off a bit.

Peach Schnapps – This schnapps tastes like a juicy peach and is the perfect flavor for this sunset cocktail.

Pineapple Juice – You can add a bit more if you are a fan of pineapple.

Grenadine – Find this in the cocktail area of the grocery store, by the simple syrup, sweet and sour mix, etc.

Ice Cubes – Helps give you the layered look of the cocktail.

Lime Slices and Cherries – To Garnish

How to Make Mexican Sunset Cocktail

Step One: Start by adding the grenadine and the amaretto glass, and add in the ice cubes.

Step Two: Next grab a cocktail shaker and add in the schnapps, pineapple juice, and the tequila. Shake well to mix.

Step Three: Now you will slowly pour this into the glass to create a layered look.

Step Four: Garnish with lime slices and cherries if you would like.

Tips For Making The Cocktail

  • Make sure you add in the grenadine and the amaretto in the bottom of the glass. Then add in the ice. This will helps keep that at the bottom so when you pour the pineapple mixture on top it doesn’t blend together.
  • When you pour the pineapple mixture into the glass make sure to pour slow. Otherwise it will mix with the bottom layer.
  • Add more alcohol if you want a stronger cocktail. Pick and choose what to add more or take away to create your custom cocktail.

Common Questions

What to serve with this tequila sunrise cocktail?

You can pair your cocktail with any main dish or appetizers as you would like. Fish tacos, or even fajitas would be a delicious pairing for a dinner. Or if you are entertaining try this charcuterie board, ham and cheese sliders, or pair with peach salsa and tortilla chips

Can I make this cocktail in advance?

This isn’t a drink that you will want to make in advance. Since you are going to create a layered drink it is best to assemble right before serving. That way you get all the flavors and the ice won’t be watered down in the cocktail if it melts.
