What are butter cookies? 

Butter cookies are a tried and true cookie recipe that has been around for so long. The cookies have a rich buttery flavor that really wins everyone over. Add on the festive sprinkles, and you have kids running for a cookie. 

Ingredients Needed

White Cake Mix – So I used a white cake mix to help reduce time when making these cookies. 

Butter – You have to use real butter that is room temperature. Margarine can not be substituted. 

Cream Cheese – Room temperature cream cheese is truly going to elevate the flavor of these cookies. 

Powdered Sugar – You will roll the cookies in the powdered sugar right before baking. It adds a gorgeous look to the cookies. 

Christmas Sprinkles – The sprinkles are optional but the cookies turn out gorgeous with the pop of color. 

Note: *If you use sugar sprinkles it will just turn the batter that color. Be sure to use a bigger size sprinkle.

How to Make Butter Cookies 

Step One: Now with a stand mixer or hand mixer whip up the cream cheese and butter together. Let it create a creamy texture. 

Step Two: Next you will add in the cake mix, and mix until it is combined. 

Step Three: Fold in the sprinkles, and then cover and refrigerate the dough for one hour to overnight. 

Step Four: Once dough is chilled you will preheat the oven and line your baking sheet with parchment paper. 

Step Five: Roll cookies into a ball and then roll in the powdered sugar. 

Step Six: Bake until the cookies are done, and then allow cookies to fully cool and serve.

Storing 

Refrigerate – Any cookies you do not eat right away, will store best refrigerated. You will find with the cream cheese in the cookies they can spoil if left out on the counter. The cookies will store for up to 5 days. 

Freeze – Or you can place in a freezer bag or freezer container and freeze the cookies for 3-4 months. Then thaw in the fridge overnight. 

Can I use a yellow box cake mix? 

You will find you can swap a white cake for a yellow cake mix. The flavor will change slightly but you will still have a cookie that is similar in flavor. 

Go right ahead and make a larger batch of these cookies if you want. Just double the recipe and bake the cookies in batches. This is a very easy recipe and affordable so it is great for serving a crowd.

Ingredients

  • 1 boxed white cake mix
  • ½ cup butter, room temperature
  • 8 oz cream cheese, room temperature
  • ½ cup Christmas sprinkles
  • ½ cup powdered sugar

Instructions

    1. Line a baking sheet with parchment paper, set aside.
    2. Using the paddle attachment on your stand mixer, cream room temperature butter and cream cheese until smooth consistency.
    3. Add in white cake mix, and beat until well incorporated.
    4. Fold in sprinkles.
    5. Refrigerate for at least 1 hour or overnight.
    6. Preheat the oven to 350 F.
    7. Roll cookies into 1 inch balls and roll to coat in powdered sugar.
    8. Place cookies on the prepared baking sheet and bake for 15 min.

Notes

*If you use sugar sprinkles it will just turn the batter that color. Be sure to use a bigger size sprinkle.
