I love Christmas. I love the lights, the songs, and of course, baking! One of my favorite parts about Christmas is baking cookies with my family. We always make a batch of these Grinch Cake Mix Cookies because they are so easy to make.
I’ll show you how to make the cookie dough as well as step by step instructions on how to decorate the cookies like the Grinch from Dr. Seuss’ heartwarming story for the upcoming holiday season.

- Cake mix cookie dough is sticky more so than traditional dough. It can be somewhat difficult to work with, especially when trying to shape it before baking. Try these tips to get the best results.
- If dough is too soft to roll, chill dough 30 minutes before baking – This helps make it easier to handle. It also allows the flavors of the ingredients more time to blend together which results in a better tasting overall cookie.
- Use real vanilla. Imitation extracts contains ingredients that can give a fake taste to your cake mix cookies.
- Do NOT over bake! Cake mix cookie dough is by nature, very thick. It will take about 9 minutes in the oven.
- Do NOT overmix! To get the best results, use a whisk to mix the ingredients together rather than an electric mixer.
- To Store: Cake mix cookies will last up to 7 days under regular storage conditions. Use a tight fitting lid and be sure to store them in a cool, dry place.
- To Freeze: Place cookies in an airtight container after completely cooled with parchment paper in between each layer of cookies and store for up to 3 months. Thaw cookies completely to room temperature before eating.

2 large eggs
½ cup vegetable oil
green food coloring
yellow food coloring
Frosting Ingredients
1 cup powdered sugar
1 tbsp milk
1 tsp vanilla
green food coloring
yellow food coloring
Red heart sprinkles
How to Make Grinch Cake Mix Cookies
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
In a large bowl, add cake mix, eggs, and vegetable oil and mix together well.
Add equal amounts of green and yellow food coloring in the cake mix to get your desired “Grinch” color. I used 4 drops of each color.
Using a cookie scoop, drop scoops of dough onto a prepared baking sheet about 1-2 inches apart.
Bake for 9 minutes. Remove from the oven and allow to cool on the baking sheet for a few minutes.
Remove cookies from the baking sheet, onto the wire cooling rack. Allow cookies to cool completely.
In a small bowl, mix the powdered sugar, milk, and vanilla. Add 2 drops each of green and yellow food coloring. Stir well. Check the consistency. It should be just perfect – not too runny, and not too thick.
Spread icing on the cookies. Place a heart in the center of the cookies and enjoy!
