Cookie Ingredients
- 1 box of white cake mix
- 2 large eggs
- ½ cup vegetable oil
- green food coloring
- yellow food coloring
Frosting Ingredients
- 1 cup powdered sugar
- 1 tbsp milk
- 1 tsp vanilla
- green food coloring
- yellow food coloring
- Red heart sprinkles
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
In a large bowl, add cake mix, eggs, and vegetable oil and mix together well.
Add equal amounts of green and yellow food coloring in the cake mixture to get your desired “Grinch” color. I used 4 drops of each color.
Using a cookie scoop, drop scoops of dough onto a prepared baking sheet about 1-2 inches apart.
Bake for 9 minutes. Remove from the oven and allow to cool on the baking sheet for a few minutes.
Remove cookies from the baking sheet, onto the wire cooling rack. Allow cookies to cool completely.
In a small bowl, mix the powdered sugar, milk, and vanilla. Add 2 drops each of green and yellow food coloring. Stir well. Check the consistency. It should be just perfect - not too runny, and not too thick.
Spread icing on the cookies. Place a heart in the center of the cookies and enjoy!
