Comfort food never tasted so good as this Cast Iron Glazed Bacon Meatloaf does. It’s a meal that get delicious with every bite!
How do you make meatloaf taste better? Wrap it in bacon, of course! This Cast Iron Glazed Bacon Meatloaf takes traditional meatloaf to a whole other level. Cooking it in a cast iron brings out the flavor of bacon with a brown sugar glaze that goes perfect with a wedge salad.
For this recipe, I used a Lodge 10.5″ seasoned cast iron skillet. They are fairly inexpensive at under $20 and are great to cook in. The pan already comes seasoned making your meal taste even better than cooking in a normal skillet. To clean: wash it by hand with mild soap or none at all. Dry promptly and thoroughly using a paper towel. When you are done drying it rub a light layer of vegetable oil through the inside of the pan when it’s still warm and hang to dry.

Serves 6-8
2 pounds ground beef
1 onion, chopped
1 green pepper, chopped
3 cloves garlic, chopped
1 Tbsp oil (to sauté)
2 eggs
½ cup pork rind crumbs (or plain bread crumbs if not doing keto)
1 ½ tsp garlic salt
½ tsp pepper
½ lb bacon
Glaze Ingredients
½ cup sugar free ketchup (or regular ketchup if not doing keto)
2 Tbsp hot sauce – for less spicy use half amount or none
2 Tbsp Swerve brown sweetener (or brown sugar if not doing keto)
½ tsp paprika
How to Make Cast Iron Glazed Bacon Meatloaf
Preheat oven to 375 degrees F.
Sauté onion, green pepper, and garlic in pan. When browned, set aside and let cool.
In medium bowl, combine ground beef, bread crumbs, eggs, garlic salt, and pepper together. Mix in cooled onion, pepper, and garlic.
Press meatloaf mixture into 9-inch cast iron pan. Add raw bacon to top. I like to do a lattice pattern. Put in oven and bake for 50 minutes.
Meanwhile, combine all ingredients for glaze. After meatloaf has cooked for 50 minutes, remove from oven and brush with glaze. Cook for 10 more minutes. Remove from oven. Make sure internal temperate is at least 160 degrees. Let meatloaf set for 10 minutes. Slice into pieces. Serve directly from cast iron.

Just made this tonight. Smells so good when baking in the oven. I wasn’t too sure about 2 tablespoons of hot sauce as that would be WAY to spicy for my little ones. We loved it and might skip the hot sauce next time.

This is a staple in our household. The only thing we do different Is we cook the bacon ahead of time and then put it on top because when we tried it the first time according to recipe the bacon was soft and we like it crispy.
