    Weight Watchers Caramel Apple Mini Pies

    These Weight Watchers Caramel Apple Mini Pies are a tasty spin on the classic apple pie dessert with a flaky pie crust filled with apple pie filling, cinnamon, and caramel baked to perfection!

    Weight Watchers Caramel Apple Mini Pies

    When I made these the other day they were a huge hit with the family and didn’t last long. They are already requesting for me to make them again. I’m thinking this would also be good with other flavors such as raspberry or blueberry. And surprisingly they are easier to make than you think. I used a biscuit cutter to make the perfect size circles for each pie and it turned out great. I think you will like this recipe as much as we do too!

    Easy Apple Hand Pies

    WW – 5 points (Green Plan)

    These quick and easy apple pies are perfect for an appetizer, dessert table at Thanksgiving or when you want a healthy dessert. Plus, they are only 5 points each on the Weight Watchers program and worth every bite!

    To get them sealed perfectly is all about the technique. A few tips for the pies coming out perfect is making sure the filling is in the middle of the pie and not spilling out. For the outer edge push down just enough to crease the two dough circles together making sure the dough does not break. The final step for a perfect hand pie is the vent by using a knife and making an “X” on the top. Bake till golden brown and serve warm for a delicious dessert.

    Caramel Apple Pie Ingredients

    Caramel sauce – any brand will work
    1 pkg. of pre made pie crusts (2 – 9 inch)
    2 Tablespoons of all purpose flour
    1 Tablespoon sugar
    ½ tsp cinnamon
    ½ tsp nutmeg
    a dash of ginger
    1 large apple (Honeycrisp or Granny Smith tastes the best)
    1 egg
    1 tsp water

    How to Make Mini Pies

    Pre heat oven to 375 degrees.

    Unroll pie crusts. Using a biscuit cutter (3 inch round cutter) to cut out 28 rounds, reroll scraps as needed and roll out using a rolling pin.

    In a small dish combine flour, sugar, nutmeg, cinnamon and ginger. Peel, core and dice apples into tiny pieces. Add apple, dry ingredients and 1 tablespoon of caramel to the mixture. Mix until well combined. 

    Lay out 16 rounds of pie crust on a parchment lined baking sheet. In a small bowl whisk egg and water together. Using a brush, brush egg mixture on the edges of the pie crust.

    Spoon 1 tablespoon of apple mix into the center of each pie round. Top with another pie crust round. Gently press and seal the edges using a fork. Repeat until all rounds are full.

    Using a sharp pairing knife make a small X on top of the pie. Then brush the top of each pie with egg wash mixture.

    Bake for 20-23 minutes, until golden brown. Best when served warm but you can allow to cool also and if you wish you may drizzle more caramel over each pie.

    Store any remaining leftovers in air tight container for up to 3 days.
