    Keto Raspberry Muffins

    You may have remembered when I posted the recipe for Keto Blueberry Muffins. This time I thought I would try to use that recipe and make Keto Raspberry Muffins. I liked how these turned out. They ended up being so good that I was not only eating them with a meal but for a healthy snack as well.

    Keto Raspberry Muffins

    Makes 12 Muffins

    Ingredients

    2 cups almond flour

    1 cup Swerve granular sweetener

    1½ tsp baking powder

    Pinch of salt

    3 tbsp butter ( I like to use Kerrygold butter)

    ⅓ cup unsweetened almond milk

    3 large eggs

    1 tsp vanilla extract

    1 cup raspberries cut in halves

    Directions

    Preheat oven to 350 degrees.

    Add cupcake liners to muffin pan.

    Add flour, sweetener, baking powder & salt to a bowl and mix together.

    Melt the butter and mix it into the dry ingredients until it starts clumping.

    In a separate bowl whisk the eggs, milk and vanilla, then mix it into the flour until it’s combined. Gently mix in raspberries.

    Spoon the batter into the muffin pan & bake for 20-25 mins or until tops are nice and golden and toothpick comes out clean.

    Let cool in the muffin pan for a few minutes.

    After a few minutes, pull them out and let them cool completely on a wire rack.

    You can also add butter to the muffins if you want. I like to use Kerrygold butter.

    • 1½ tsp baking powder
    • Pinch of salt

    Can you have raspberries on the keto diet?
    Yes, raspberries is one of the exceptions you can have on the keto diet in moderation. Eat them in moderation alone or in a berry salad.

    How many carbs are in raspberries?
    Fresh raspberries have about 7.5 grams of carbs per half cup. Thankfully there are not many raspberry in each muffin so you can enjoy this healthy snack.

    Can you make these keto raspberries muffins ahead of time?
    Yes, you can make these ahead of time. They are great for an addition for dinner, healthy snack or breakfast. To make ahead double or triple the recipe. Let muffins cool and then put in a freezer storage bag and store in freezer. When you want to eat, let thaw out on counter or warm up in microwave for a few minutes.

      Just came across these on Pinterest and they look delicious! How do you count the net carbs? Just started Keto and am still figuring out how to break down recipes. Thank you!

        I put everything into my fitness pal app and get the net carbs from there.
