Out of all the veggies one can add to a well-balanced meal, I have to give it to carrots as the ultimate side dish. Carrots are so tasty, most people are unsure of whether their health benefits outweigh the effects of the sugar content they possess. They easily make up a full day of vitamin A intake and the high fiber content is excellent for digestion.
It’s only a side benefit that carrots happen to taste so good. The real benefit is how rich they are in nutrients including antioxidants. Carrots contain a lot of good stuff, and simply cooked carrots, such as instant pot carrots, taste pretty sweet due to the breakdown of the sugars they contain in the cooking process.
However, we love to enhance that natural sweetness by adding a sugary glaze, just to make extra sure we aren’t overdoing it on the healthy side.

Nothing enhances the natural sweetness of cooked carrots like a brown sugar glaze covering every carotenoid containing cut. Carotenoids are the good stuff in carrots that you convert to vitamin A as you digest them. They’re responsible for improving eye health and promoting better hair and skin. Just one cup of cooked carrots gives you one day of nutritional value for these benefits.
The sugar content of these sweet glazed instant pot carrots may be high, but the significant source of fiber in your carrots helps to maintain sugar absorption and avoid a sudden spike in sugar levels. Glazing carrots works because the brown sugar glaze enhances the carrot’s flavor as opposed to covering it up as you would with another vegetable that’s not as naturally sweet. Sweet Glazed Carrots Ingredients
1 lb. baby carrots
¼ butter
⅓ cup brown sugar
½ tsp salt
½ water
How to Make Instant Pot Sweet Glazed Carrots
Add all of your carrots and water to the instant pot. Close the lid on your instant pot and close the valve by pushing it away from you. Set your instant pot to high pressure for four minutes.
Once your four minutes is up, do a manual release by Bringing the valve towards you. Drain the water from your instant pot and remove carrots. Set aside.
Press cancel on your instant pot and then press sauté mode. Add your sugar butter and salt. Continue to mix until the butter is completely melted.
Add your carrots to your butter and sugar mixture. Stir well and then serve! If you choose to make more servings keep the Pressure Cook time the same but multiply the ingredients.
