These Instant Pot Cowboy Beans are a super easy delicious, hearty meal that doesn’t take long to cook and perfect food for the cooler weather!
This recipe is one of my favorites and make it often during the winter months. There is very little prep work and the Instant Pot does the rest of the cooking for you. I use cans of baked beans in this recipe but you can also swap them out for pinto beans if you prefer. Just make sure you soak them before cooking if you do use them.
Easy Cowboy Beans
There are so many ways you can make cowboy beans depending on your liking. I like to add mushrooms to mine but you can also omit them if you don’t like mushrooms. Instant Pot cowboy beans are great for cookouts and potlucks and pair nicely with loaded beer can burgers, grilled teriyaki steak skewers and more.
For this recipe, I used my regular Instant Pot but have also used my Ninja Foodi which is also a pressure cooker and an air fryer in one appliance. Either appliance works great with this recipe making it enjoyable for the entire family and on the table quickly.

Cowboy Beans Ingredients
1 tablespoon olive oil
2 cups cocktail sausages
2 cans of baked beans
1 pack of bacon
2 cups of mushrooms
1 ½ cups water
Salt & pepper to taste
How to Make Instant Pot Cowboy Beans
Chop the onions and mushrooms.
Saute your bacon in the Instant Pot until cooked. You can cut the bacon into small pieces before or after you cook it. Remove from the pot once cooked.
Add your olive oil, onions and mushrooms to the Instant Pot. Saute until brown. Add the baked beans to your pot, followed by the cocktail sausages and bacon pieces.
Add your water to the pot and stir the mixture around before sealing the lid. Pressure cook on manual for 4 minutes. Quick release once finished.
Serve and Enjoy!
