Homemade Turkey Soup is a great way to use up Thanksgiving turkey leftovers and a delicious classic soup made from scratch!
If you don’t like to waste food, this recipe is for you. I can remember when my mom used to do this growing up and now I’m doing it with my family making it a holiday tradition.
Turkey Soup Made from Scratch
This homemade soup is easy to make as you boil the turkey carcass for broth and then add turkey, noodles, corn, carrots & potatoes! It’s a great Thanksgiving leftover turkey recipe and the perfect comfort soup that warms the soul.

Turkey Soup Ingredients
Turkey Carcass
Left Over Turkey Meat
15oz Canned Corn
15oz Canned Potatoes
15oz Canned Carrots
8oz Egg Noodles
1 Tablespoon Salt
1 Teaspoon Pepper
3-4 Quarts Water
How to Make Homemade Turkey Soup
Place your turkey carcass into a large pot. Make sure to add in the turkey neck, giblets, any skin, & leftover turkey drippings!
Add about 3-4 quarts of water to the pot or however much you need to submerge the carcass. Add a tablespoon of salt and a teaspoon of pepper.
Bring the pot to a boil over high heat. Once boiling, turn the burner down to a low simmer.
Simmer for about 5 hours while checking every now & then. If your water is boiling off too quickly and the bones start to stick out of the water, add more water to cover it up, and bring back to a simmer.
Pour the stock through a strainer into a large bowl catching any bones. Pour boneless stock back into the large pot.
Add left over turkey chunks, corn, potatoes & carrots. Bring to a boil and then simmer for 45 minutes. Add in egg noodles & then bring up to medium heat. Once noodles have softened, serve & enjoy!
Tips & Variations for Leftover Turkey Soup Recipe
- You can swap out egg noodles for any kind of rice. White rice, brown rice, quinoa, or wild rice.
- If you need more flavor add a chicken bouillon cube to the soup mixture.
- If the liquid level is too low add some either some more turkey juices or chicken broth.
- Store any leftovers in an airtight container in the fridge for up to 3 days.
- To freeze, allow soup to cool and put in an airtight container and store in the freezer for up to 6 months.
