I’m all about a speedy dinner — and this one is truly super fast. I tend to have a few boxes of chicken broth in my pantry, plus onions, rotisserie chicken and egg noodles — it’s practically a dinner disaster kit!
Rotisserie chicken is a great shortcut to use in your kitchen. For the convenience of store-bought rotisserie chicken, you can add a few ingredients and have a hearty meal simmering on your stove in 30 minutes.
This recipe is so easy! Make it ahead and freeze, or just make a big pot when you feel like soup. The best part about making your own chicken noodle soup is that you can customize it – you choose the vegetables and seasonings to make it unique and delicious.
It is the perfect comfort during these cold winter months and comes together in no time at all.

- If you can’t find Reames noodles you can use dry egg noodles.

Make Ahead and Freeze
This recipe is a great way to make chicken noodle soup… which you can freeze and reheat when you’re feeling under the weather.
- To freeze: Make this soup per instructions below, allow to cool completely, store in an airtight container and freeze for up to 3 months.
- To reheat: Allow to thaw in fridge overnight. Pour soup in a pan and heat on stovetop until heated through.
Chicken Noodle Soup Ingredients
2 tablespoons unsalted butter
1 large onion, diced
2 (8.25 oz) cans sliced carrots
3 celery ribs, diced
1 tablespoon minced garlic
2 (32 oz) cartons chicken stock
Kosher salt to taste
3 pounds rotisserie chicken
2 (24 oz) packages Reames frozen egg noodles
2 tablespoons parsley
2 tablespoons dill
1 tablespoon lemon juice
Pepper to taste
Chicken bouillon cubes + water if needed
How to Make Easy Chicken Noodle Soup
In a large stockpot, melt butter over medium heat. Add the onions, carrots and celery. Cook for about 4 minutes or until tender, stirring occasionally. Add minced garlic and cook for about 1 minute until fragrant.
Add chicken broth, chicken, parsley, dill, lemon juice, salt and pepper. Stir and bring to a boil.
Add noodles and stir to prevent clumping together. Simmer uncovered for 20 minutes, stirring often.
Taste test to make sure noodles are cooked and soft and soup is seasoned to your liking. Add more cook time and seasoning if needed.
Serve immediately with a side of saltine crackers.
