    • Cucumber: can use any type of cucumber. I like to use English cucumbers as they have smaller and fewer seeds.
    • Tomato: use any type of tomato you’d like. Cherry tomatoes are bite-size and sweet but take more to fill a salad bowl. I like to use beefsteak or Roma tomatoes.
    • Onion: red onions are slightly sweeter but you could use a white or yellow onion.
    • Dressing: use your favorite dressing such as oil or vinaigrette. I like to make a garlic vinaigrette.
    • Ground black pepper: season to your liking.

    How to Make Cucumber Tomato and Onion Salad

    1. Cut up cucumbers, tomato and onion and add to a large bowl.
    2. In a separate bowl, whisk together dressing ingredients. Pour dressing over top of vegetables and toss to coat. Season with pepper.
    3. Cover and refrigerate for at least 30 minutes to an hour. Serve cold and enjoy!

    Ingredients
      

    • 2 Cucumbers
    • 3 Tomatoes
    • 1 Onion
    • 1 tbsp minced garlic
    • ¼ cup white wine vinegar
    • ½ cup extra virgin olive oil
    • ¼ tsp Dijon mustard
