    Blueberry French Toast Casserole

    This easy-to-make Blueberry French Toast Casserole is a delicious breakfast that combines blueberries and cinnamon-sugar bread. It can be baked the same day or prepared the night before to save time in the morning.

    Breakfast casseroles are a favorite in our household. They’re not only simple to put together in one dish, but they’re also a hit with everyone.

    We enjoy changing them up, especially around the holidays. For example, we’ll use leftover ham in a ham, egg, and cheese casserole, or when we’re pressed for time, we prepare an overnight French toast casserole the evening before.

    This baked French toast is also perfect for a cozy Christmas morning breakfast with the family, and it fills the house with a wonderful aroma!

    Blueberry French Toast Casserole Ingredients & Substitutions

    • Blueberries: Fresh blueberries tastes the best in this recipe but you could also use frozen blueberries.
    • Bread: Stale bread works best and helps soak up the mixture and prevents from getting soggy.
    • Eggs: Only 6 eggs required for this recipe which is just enough to make it not too “eggy”.
    • Milk: Any kind of milk will work for this recipe.
    • Sugar: You can use granulated sugar or Splenda.
    • Butter: I used a stick margarine for this recipe but you could butter.
    • Cinnamon: Adds the French toast flavor.
    • Vanilla: Gives a hint of sweetness.

    How to Make Blueberry French Toast Casserole

    Preheat oven to 350 degrees F.

    In a large bowl, mix eggs, sugar, butter and cinnamon until combined.

    Cut bread into one inch cubes. Spray the bottom of a 9X13 baking dish with cooking spray.

    Add layer of cube bread in the bottom of the dish. Then, add half of the blueberries. Repeat with another the rest of the cubed bread and blueberries.

    Pour egg mixture evenly over top. Cover and let set for in fridge for at least 2 hours or overnight.

    Bake for 45 minutes or until golden brown and cooked through. Allow to cool slightly. Serve with syrup and powdered sugar sprinkled on top if you’d like.

    Helpful Tips & Variations

    • Change up the flavor using different berries such as strawberries, raspberries or a mix of berries.
    • Add a streusel topping for some crunch.
    • Top with 1 (8oz.) package of cream cheese cut into cubes for creaminess.
    • Add a blueberry sauce for more flavor.

    Storing Leftovers

    Cover leftovers and store in fridge for up to 3 days. Reheat in microwave or oven to 350 degrees F to desired temperature.

    Ingredients

      I noticed that you mentioned milk in the recipe but you left out the milk in the recipes directions. You also left out the vanilla in the directions. I separated the eggs and made a soufflé from the egg whites.
