These no bake Birds Nest Cookies are an Easter favorite! They are easy to make with butterscotch chips, chocolate chips, chow mein noodles, and egg shaped candies for a fun Easter treat.

These bird nest cookies come from the basic Haystacks cookie recipe that’s a tradition to make for Christmas.
To make our Easter-themed version of these cookies, we’ll be swapping out some ingredients and adding a festive touch.
Instead of using just one type of chip, we can use a combination of chocolate chips and peanut butter chips to give our nests even more depth in flavor.
If you’re not a fan of peanut butter, feel free to substitute it with butterscotch chips for an equally delicious result.

Birds Nest Cookie Ingredients
- Chocolate chips – I used milk chocolate chips but you can also swap for white chocolate chips.
- Peanut butter chips – These can also be swapped with butterscotch chips.
- Chow mein noodles – You can also use cocoa rice krispies as another alternative.
- Malted milk eggs – You can find them in most grocery stores during Easter season; however, if they’re not available, jelly beans or any other small candy will work just fine.
How to Make Birds Nest Cookies
Line a baking pan with parchment paper or waxed paper.
In a double boiler over boiling water, melt the milk chocolate chips and peanut butter chips, stirring until smooth (approximately 8 to 10 minutes).
Combine the melted chocolate and peanut butter chips with chow mein noodles in a medium-sized bowl, stirring until well coated.
Use a large spoon to scoop the mixture onto the prepared baking pan and shape it into nest-shaped cookies, creating a well in the middle.
Place 2-3 malted milk eggs in the well. Allow the chocolate to set either at room temperature or in the freezer before serving.

- Refrigerator: Store leftovers in an airtight container in the fridge for up to 1 week.
- Freezer: Place in a freezer-safe container or bag and store in the freezer for up to 2 months. Thaw out in fridge overnight.
