    This Slow Cooker Pork and Sauerkraut is a great way to ring in the New Year for good luck. It’s sweet, delicious and easy to make!

    Everyone has their New Year traditions depending on their roots. Being from Ohio and a Polish background, we always rang in the New Year with pork and sauerkraut for good luck.

    There are many ways to make pork and sauerkraut from the crockpot, stove and oven. Depending on how much time you have one of these methods will work for you.

    Slow cooker method is always easy for me cause New Year’s Day is when I take down all the Christmas decorations and tidy up the house. I love that the Crock Pot does all the work while I do other things.

    This recipe couldn’t be any easier of throwing everything in the slow cooker and let it do the work. We usually serve over mashed potatoes or noodles for a complete meal.

    What You Need

    • Pork Roast
    • Sauerkraut
    • Seasonings
    • Onion
    • Brown Sugar
    • Apple Juice
    • Slow Cooker

    How to Make Pork & Sauerkraut

    Step One: Rinse and pat the meat dry.

    Step Two: Place the pork roast in the bottom of the slow cooker.

    Step Three: Top the pork with the sauerkraut, onion, salt and pepper.

    Step Four: In a small bowl, mix together brown sugar apple juice. Pour the mixture over the pork and sauerkraut.

    Step Five: Cover the slow cooker and cook on high for 4-6 hours or low for 8-10 hours, or until the pork is tender and falls apart easily.

    Step Six: Use two forks to shred the pork and mix it with the sauerkraut.

    Step Seven: Serve the pork and sauerkraut over mashed potatoes or noodles and enjoy!

    Recipe Tips

    • Use a large slow cooker for this recipe so everything can fit. I would suggest at least an 8 quart crock pot.
    • Can add potatoes and carrots to the crock pot for a hearty meal.
    • Use a boneless pork roast or boneless pork loin in this recipe.

    To store your slow cooker pork and sauerkraut, simply place it in an airtight container in the fridge for up to 3 days.

    Alternatively, you can freeze it for up to 3 months. To reheat, simply thaw in the fridge overnight and reheat in microwave or oven to desired temperature.

    Can I use fresh sauerkraut instead of jarred sauerkraut?

    Yes, you can use fresh sauerkraut in this recipe. Just make sure to not drain or rinse it.

    Do I need to brown the pork before slow cooking it?

    No, you don’t need to brown the pork before slow cooking it. However, if you want to, you can sear the pork in a skillet over high heat for a few minutes until it’s browned on all sides.

    How long will this dish keep in the fridge?

    This dish will keep in the fridge for up to 3 days.

    • 2-3 pound boneless pork shoulder roast
    • 32 oz. sauerkraut undrained
    • 1 medium onion thinly sliced
    • 2 tablespoons brown sugar
    • 2 tablespoons apple juice
    • Salt and pepper to taste

      I do not do sugar so omitted the brown sugar and juice. Used plain water. Worked for me.
