- 2-3 pound boneless pork shoulder roast
- 32 oz. sauerkraut undrained
- 1 medium onion thinly sliced
- 2 tablespoons brown sugar
- 2 tablespoons apple juice
- Salt and pepper to taste
Rinse and pat the meat dry.
Place the pork roast in the bottom of the slow cooker.
Top the pork with the sauerkraut, onion, salt and pepper.
In a small bowl, mix together brown sugar apple juice. Pour the mixture over the pork and sauerkraut.
Cover the slow cooker and cook on high for 4-6 hours or low for 8-10 hours, or until the pork is tender and falls apart easily.
Use two forks to shred the pork and mix it with the sauerkraut.
Serve the pork and sauerkraut over mashed potatoes or noodles and enjoy!

To store your slow cooker pork and sauerkraut, simply place it in an airtight container in the fridge for up to 3 days.
Alternatively, you can freeze it for up to 3 months. To reheat, simply thaw in the fridge overnight and reheat in microwave or oven to desired temperature.
