When eating on a low carb diet, swapping out breads and grains is a great way to keep the carbs low. I tend to use lettuce, egg or cheese as a wrap for my sandwiches, tacos and such. An easy lunch recipe I like to make is a Low Carb Turkey Club Egg Wrap. It doesn’t cost much to make and is a meal that even the kids love. 

You can add whatever ingredients you want into the egg wrap but remember to keep it low carb. To lower carb count, you can omit the cornstarch/water mixture but may result in tearing of the egg wrap. Feel free to try both ways and see how it turns out. Enjoy!

Low Carb Turkey Club Egg Wrap

Yields: 1 wrap

Ingredients

  • 2 large eggs
  • ½ teaspoon cornstarch
  • 1 teaspoon warm water
  • 1 tablespoon butter
  • ¼ cup mozzarella cheese, shredded
  • 4 slices deli turkey
  • 2 slices bacon
  • ½ avocado, sliced
  • A handful of fresh spinach
  • Salt and pepper to taste
  • Optional add-ins: thinly sliced tomato, sliced bell peppers, sliced onions (beware that tomatoes and onions can rack up in carbs if too many is consumed)

Directions

  1. In a small bowl, whisk together the cornstarch and water. Add the two eggs and whisk again until combined.
  2. Heat a large skillet over low-to-medium heat. Add butter and allow it to completely melt and coat the entire bottom of the pan.
  3. Pour in the egg mixture and lift the pan – tilting to each side so the egg completely covers the bottom of the pan in a thin layer. Allow it to cook for just a couple of minutes. Sprinkle on desired amount of salt and pepper.
  4. Using a large wide spatula, gently lift the outer edges of the egg and then flip it over to cook the remaining side for 1-2 minutes. Remove from heat.
  5. Add desired toppings, starting with shredded cheese.
  6. Gently roll up the egg wrap and slice in half for easier eating.

What can I eat instead of bread on the Keto Diet?

There are several alternatives you can eat instead of bread on the Ketogenic Diet. Some bread alternatives that you can use are 90 second bread, egg, lettuce, cauliflower crust, bell pepper shell, and cheese crust. 

What vegetables are low carb? 

Not all vegetables are low in carbs but there are a select few you can have in moderation.  Some vegetables that are low in carbs and great for a low carb or keto diet are bell peppers, avocado, broccoli, asparagus, spinach, zucchini, lettuce, green beans, kale, cauliflower, cucumbers, and celery. 

What can I eat for lunch on the ketogenic diet?

It’s always great to keep a balanced amount of carbs throughout the day so you don’t go over the amount of 20 grams. Some ideas for lunch while on keto are salads with keto approved veggies and dressing, egg wraps, taco salad minus the tortilla shell/wrap, fish, and lettuce wraps just to name a few.
