    These Loaded Fried Mashed Potato Cakes are a great way to use up leftovers with a variety of flavor combinations you can make!

    Loaded Fried Mashed Potato Cakes

    I remember as a kid my mom would make just about anything into fried patties/cakes with just a few ingredients such as salmon patties, tuna patties, old fashion potato cakes and more. It makes an inexpensive dinner or lunch and so simple to do. For this recipe we loaded up on some delicious ingredients but you can add and take out whatever you want for your own potato cakes recipe creation. Enjoy!

    how to make Loaded Fried Mashed Potato Cakes

    Potato Cake Ingredients

    Serves 8

    Butter
    Bacon, cooked and crumbled
    Large onion, chopped
    Green pepper, diced
    Ham, diced
    Mashed potatoes
    Shredded mild cheddar
    Flour
    Eggs
    Black pepper
    Vegetable oil
    Sour cream (used for potato cake topping) 

    How to Make Loaded Fried Mashed Potato Cakes

    Place bacon in a medium skillet and cook on medium high heat until brown and crispy on both sides. Place bacon on a paper towel and blot with another paper towel to get rid of excess grease. Then, crumble bacon into small pieces.

    Keeping the bacon grease in the skillet, add butter and melt on medium high heat. Add onions, green pepper and ham and cook until browned, about 15 minutes. Set aside.

    In a large bowl, add mashed potatoes, bacon, shredded cheese, eggs, flour and pepper along with onions, green pepper and ham and mix all together. 

    In a clean skillet heat vegetable oil over medium heat. Place heaping spoonfuls of potato mixture into heated oil and then flattening with the back of your spoon. Cook 5 minutes on each side until golden brown. Drain excess grease on paper towel.

    Serve warm with a dollop of sour cream on top.

    Ingredients
      

    • 2 tbsp butter
    • 8 slices bacon cooked and crumbled
    • ½ large onion chopped
    • 1 green pepper diced
    • ½ cup ham diced
    • 1 ¼ cups mashed potatoes
    • 1 cup shredded mild cheddar
    • ¾ cup flour
    • 2 eggs
    • ½ tsp black pepper
    • 2 tbsp sour cream used for potato cakes topping
    • 4 tbsp vegetable oil

    Instructions

      simpler recipe is 2 cups mashed potatoes 1/2 cup of flour and 1 egg then treat it like hotcake batter (add ingredients to taste)

      I like too use mine with Salmon. make just the same way, just add canned salmon. Delicious.
