- 2 tbsp butter
- 8 slices bacon cooked and crumbled
- ½ large onion chopped
- 1 green pepper diced
- ½ cup ham diced
- 1 ¼ cups mashed potatoes
- 1 cup shredded mild cheddar
- ¾ cup flour
- 2 eggs
- ½ tsp black pepper
- 2 tbsp sour cream used for potato cakes topping
- 4 tbsp vegetable oil
Place bacon in a medium skillet and cook on medium high heat until brown and crispy on both sides. Place bacon on a paper towel and blot with another paper towel. Then, crumble bacon into small pieces.
Keep the bacon grease in the skillet, add butter and melt on medium high heat. Add onion, green pepper and ham and cook until browned, about 15 minutes.
In a large bowl, add mashed potatoes, bacon, cheese, eggs, flour and pepper and mix together.
In a clean skillet heat vegetable oil over medium heat. Place heaping spoonfuls of potato mixture into heated oil flattening with the back of your spoon. Cook 5 minutes on each side until golden brown. Drain excess grease on paper towel.
Serve warm with a dollop of sour cream on top.
