Ingredients

  • 2 tbsp butter
  • 8 slices bacon cooked and crumbled
  • ½ large onion chopped
  • 1 green pepper diced
  • ½ cup ham diced
  • 1 ¼ cups mashed potatoes
  • 1 cup shredded mild cheddar
  • ¾ cup flour
  • 2 eggs
  • ½ tsp black pepper
  • 2 tbsp sour cream used for potato cakes topping
  • 4 tbsp vegetable oil

Instructions

  • Place bacon in a medium skillet and cook on medium high heat until brown and crispy on both sides. Place bacon on a paper towel and blot with another paper towel. Then, crumble bacon into small pieces.
  • Keep the bacon grease in the skillet, add butter and melt on medium high heat. Add onion, green pepper and ham and cook until browned, about 15 minutes.
  • In a large bowl, add mashed potatoes, bacon, cheese, eggs, flour and pepper and mix together.
  • In a clean skillet heat vegetable oil over medium heat. Place heaping spoonfuls of potato mixture into heated oil flattening with the back of your spoon. Cook 5 minutes on each side until golden brown. Drain excess grease on paper towel.
  • Serve warm with a dollop of sour cream on top.
