Keto Reuben Roll Ups

Enjoy a classic Reuben sandwich without the extra carbs with this Keto Reuben Roll Ups recipe. It makes the perfect snack or an easy lunch option with only 3 net carbs per serving with the dressing.

Keto Reuben Roll Ups

For this recipe, I made a keto friendly thousand island dressing to dip the keto reuben rolls in but you could also use sugar free mustard or even a dijon mustard to dip them in. Feel free to use whatever dipping sauce you would like as long as it’s keto friendly. Enjoy this recipe!

Reuben Roll Ups

Ingredients

Serves 10

10 corned beef, medium thin sliced
10 swiss cheese slices
14 oz can of sauerkraut, drained
Butter, melted (I like to use Kerrygold butter)
Keto Thousand Island dressing (see recipe below)

How to Make Keto Reuben Roll Ups

Preheat oven to 375 degrees. 

Place a piece of parchment paper on a cookie sheet. Lay out corned beef slices on parchment paper. Add a slice of swiss cheese to each corned beef slice. Spoon a tablespoon of sauerkraut and spread on top of cheese slice.

Roll up the corned beef slices. Brush the tops with melted butter. Bake for 10 minutes. 

Serve immediately with Keto Thousand Island dressing.

How to Make Keto Thousand Island Dressing

24 servings

1/2 cup Sir Kensington’s Mayo
1/4 cup sugar free ketchup
1/2 tbsp minced garlic
2 tbsp lemon juice
1 tbsp sriracha
1 tsp onion powder
1/2 tsp sea salt
Pepper to taste

Directions

Add all ingredients to a medium bowl and mix together. Use for salad dressing or dipping sauce. Store any leftovers in fridge for 3-4 days.
