Keto Reuben Roll Ups

Ingredients

  • 10 corned beef medium thin sliced
  • 10 swiss cheese slices
  • 14 oz can of sauerkraut drained
  • Butter melted (I like to use Kerrygold butter)

Instructions

  • Preheat oven to 375 degrees. 
  • Place a piece of parchment paper on a cookie sheet. Lay out corned beef slices on parchment paper. Add a slice of swiss cheese to each corned beef slice. Spoon a tablespoon of sauerkraut and spread on top of cheese slice.
  • Roll up the corned beef slices. Brush the tops with melted butter. Bake for 10 minutes. 
  • Serve immediately with Keto Thousand Island dressing.
