    Keto No-Churn Chocolate Ice Cream

    This easy, creamy Keto No-Churn Chocolate Ice Cream is a great low carb treat that only takes 5 ingredients to make and no ice cream maker required! 

    Can you have ice cream on the keto diet?

    Yes, you can have ice cream on the keto diet but it must be made with keto friendly ingredients. While you can purchase ice cream at the store, some may not be as keto friendly as you think especially if you are following strict keto. Making your own keto ice cream at home is better because you know what the ingredients are and don’t have to worry about hidden ingredients that may throw you out of ketosis.

    I love ice cream on most days especially in the summer but don’t want to give up my keto lifestyle so this keto ice cream does the trick when I get a craving. If you’re not a fan of chocolate flavor, try this Keto No-Churn Vanilla Ice Cream recipe. Both are creamy, smooth and delicious! I hope you enjoy this recipe as much as I do!

    Ingredients

    • Heavy whipping cream
    • Butter
    • Granular sweetener (Swerve)
    • Unsweetened cocoa powder
    • Vanilla extract
    • *Optional: ½ cup shavings from a stevia sweetened or unsweetened chocolate bar

    How to Make Keto No-Churn Chocolate Ice Cream

    Add 2 cups heavy whipping cream, granular sweetener, and butter to a medium saucepan. Simmer over medium heat, stirring until sweetener completely dissolves.

    Bring mixture to a boil, then lower the heat and simmer for 30 minutes until reduced to about half, stirring occasionally. Pour into a heat-proof storage container and allow to cool to room temperature.

    Once cooled, add cocoa powder and vanilla and mix. *Here is where you would add the optional chocolate shavings.

    In a mixing bowl, add remaining 2 cups of heavy whipping cream and whip to stiff peaks. Gently fold cocoa mixture into the whipped cream.

    Freeze for 3-4 hours and allow to sit at room temperature for 15-30 minutes to thaw slightly.

    Serve and enjoy!

    Please note- this will have a mousse like texture when thawed completely.
