Keto Mason Jar Chocolate Ice Cream

This Keto Mason Jar chocolate ice cream has become my new obsession! It’s quick, easy to make and only 3 net carbs per serving!

Sure, there are other ice cream brands like Halo and Rebel that are just as delicious but at $4-$6 a pint that tends to get expensive. This recipe is fairly inexpensive to make and tastes just like Wendy’s chocolate frosty. I like to triple the batch and pour it into portion cups and freeze so I can have it on hand for the whole week. 

To portion out the keto ice cream, I used these Snapwear portion cups. They are sturdy and have a suction cup lid that snaps on to keep it secured when freezing. There are also lots of other varieties of freezer portion cups to choose from if you want something different.

Can I freeze mason jars with metal lids?

Yes, you can. Some people say that the mason jars with the metal lids tend to hold up just fine in the freezer and a great way to make ice cream in but others have had them break. Others have said that the glass ones may break, you can use plastic mason jars instead. For this recipe I used a large plastic mason jar container versus a glass one.

Keto Mason Jar Chocolate Ice Cream Ingredients

Serves 2

How to Make Keto Mason Jar Chocolate Ice Cream

Add all ingredients to a small wide mouth mason jar. If you are making a triple batch use a large mason jar to hold all of the ingredients.

Screw on the lid to the mason jar and shake for 5 minutes. Put in freezer and freeze for 3 hours.  After 3 hours remove from freezer and enjoy!

If you are making a triple batch pour the shaken ingredients into small portion cups. Put the lids on the portion cups and place in the freezer and freeze for 3 hours. Enjoy as you wish throughout the week!

Ingredients

  • 1 cup heavy whipping cream
  • 2 tbsp Lakanto Monkfruit Classic
  • 2 tbsp unsweetened cocoa powder
  • 2 tsp clear vanilla extract
  • Pinch of salt

Instructions

    1. Add all ingredients to a small wide mouth mason jar.
    2. Screw on the lid to the mason jar and shake for 5 minutes. Put in freezer and freeze for 3 hours.  After 3 hours remove from freezer and enjoy!

    Sounds great Alison! Can you suggest any other sweetener that might work the same?

      You can use a granular erythritol. Or if you don’t want it keto friendly you can use regular sugar.

    Alison. I just made this with exact ingredients you have listed. I cup HWC is 789 calories and unsweetened cocoa is 40 so for 2 servings it would be around 415 calories per 1 serving and you have 222 per 1 serving. I am new to Keto so where did I go wrong.

      The nutritional value is per serving and can vary per individual depending on which brand you buy. You can scan the ingredients you are using in the carb manager app to get the right information for the products you used.

    this ice cream is not scoopable is it ? it becomes rock hard and you have yo thaw it out to eat?

      We just made this for the first time and can’t believe how rock hard it is. We thought it was really good, but the hardness was disappointing.

        You may need to shorten the freeze time a bit or you can thaw it out for about 20 minutes before consuming.

    1/2 c whipping cream has 400 cals and 43 gm fat!! Am just a little worried about this much in one serving. As a treat even…..

    My heavy cream says 1 carb per 1tbsp. So that would be A WHOLE lot of carbs.

      I would look for a different brand that has less carbs. I use my local store’s brand. It’s less carbs.

    Although this may not be keto friendly, I add 1 tbsp of vodka ( not for the alcohol ), this prevents the ice-cream from freezing hard. I would like to note that I also make a triple batch for the whole family and the alcohol is simply a preventative ingredient. For those that enjoy alcohol, feel free to use a 4tbsp amount if your favorite choice Rum, vodka, or liquor.
