Keto Loaded Nachos

These keto loaded nachos are the perfect appetizer for the big game, pot luck or get together. It is loaded up with delicious goodness and keto friendly. I made the tortilla chips from tortilla shells in the air fryer using these instructions. The topping for the loaded nachos are up to you but I used grass-fed beef from Butcher Box, Monterey Jack cheese sauce (or you can just melt any cheese on top), lettuce, Pico de Gallo, olives, jalapenos and sour cream.

While there is a lot of steps to make these nachos I promise it will be worth it in the end. To cut down on time you can make the low carb tortilla chips the night before and then make the nachos before the party. Enjoy!

Keto Loaded Nachos

Ingredients for Keto Loaded Nachos

Low Carb tortilla chips (1 bag of low carb tortillas cooked in air fryer)
Keto taco seasoning (see below for ingredients)
Monterey Jack cheese sauce (see below for ingredients and do this step after you add the beef to the chips)
1 lb ground beef
1/2 bag shredded lettuce
Pico de Gallo
Olives
Jalapenos
Sour cream

Ingredients for Keto Taco Seasoning 

1 tbsp chili powder
1 tbsp ground cumin
1/2 tsp garlic powder
1/4 tsp onion powder
1/4 tsp ground red pepper
1/2 tsp paprika
1 tsp salt

Ingredients for Monterey Jack Cheese Sauce

2 tbsp butter
2 tbsp almond flour
2 cups heavy cream
2 1/2 cups shredded Monterey Jack cheese

Directions for Cheese Sauce

Add butter to a bowl and melt in microwave. Add flour to it and cook in microwave for 1 minute. Whisk in heavy cream and cook for one minute in microwave. Stir in cheese until melted. Pour over beef and tortilla chips.

Directions for Keto Loaded Nachos

Spread your low carb tortilla chips on a plate.

Brown meat in large skillet on medium-high heat. Drain fat. Add all keto taco seasonings together and mix in with meat and water. Bring to a boil. Reduce heat and simmer for 5 minutes, stirring occasionally. Add to plate of tortilla chips.

Add cheese sauce, lettuce, Pico de Gallo, olives, jalapenos, and sour cream.

Serve immediately.
