Throwing a party but want to stay in ketosis? Try these Keto Cheesy Spinach Roll Ups for your next gathering. They are keto friendly coming in at 3 net carbs and the perfect appetizer to help you stay on track. Pair it with your favorite dipping sauce for a delicious finger food!
The dough is made from fathead dough but could also be swapped out using a low carb tortilla with no baking required. I like to use Almond Flour in my dough but you could also use Coconut Flour and use this dough recipe if so.
Keto Cheesy Spinach Roll Ups
Ingredients for Cheesy Spinach Filling
2 cups spinach, chopped
½ cup shredded mozzarella cheese
½ cup grated Parmesan cheese
¼ cup cream cheese softened
1 egg, separate yolk and egg white
Ingredients for Dough
1 ½ cups Mozzarella cheese, shredded
2 oz. cream cheese, cut into cubes
1 large egg
1 ⅓ cups almond flour
Directions
Preheat the oven to 375 degrees.
In a large bowl add 1 ½ cups of mozzarella cheese and 2 oz. cream cheese and microwave for 45 seconds. Stir. Put back in microwave for another 45 seconds. Beat in 1 large egg and add in almond flour and mix. Knead with hands until dough forms.
Lay a piece of parchment paper down, add the dough to the top and then lay another piece of parchment paper on top of the dough. Roll out the dough until it’s thin enough but not too thin covering the size of the parchment paper. (If there is too much dough you may need to separate it in half and repeat the steps of rolling it out.)
Take off the top parchment paper and leave the bottom one for the dough to set on. Use a knife cut the dough so it makes a large rectangle.
In a separate bowl, mix spinach, cheese and egg yolk until well combined. Spread the cheesy spinach mixture onto dough making sure it is covered about an inch from the edges. Roll up carefully. (if dough begins tear use the parchment paper as a guide to roll it up.)
Brush the top of the dough with egg white. Cut into slices and lay on a cookie sheet and bake for 12-14 minutes. Serve immediately.
