Dumbo Popcorn Cupcakes

The release of Dumbo is heading to theaters on March 29, 2019 and I am so excited to see it. He’s cute, adorable and melts my heart. Watching the trailer leaves me teary eyed so be sure to grab your box of tissues when you watch it.

To celebrate we are making these Dumbo Popcorn Cupcakes that are not made with real popcorn but with marshmallows to look like popcorn. They are the cutest and fun for kids to make so get ready to imagine going to the circus seeing Dumbo with his big ears and enjoying a delicious cupcake.

Dumbo Popcorn Cupcakes

Cupcakes Ingredients

  • 1 box of white cake mix
  • 3 egg whites
  • 1 1/4 C water
  • 1/3 C canola oil

Vanilla Frosting Ingredients

  • 1 C unsalted sweet cream butter, softened
  • 2 C powdered sugar
  • 1 tsp pure vanilla extract
  • 2-4 tbsp heavy whipping cream

Decorating Ingredients

  • 1 bag mini marshmallows
  • Scissors
  • Wilton yellow color mist

Cupcake Directions

  1. Preheat oven to 350 degree and line cupcake pan with cupcake liners.
  2. Using a standing mixer, mix all cupcake ingredients together until combined.
  3. Follow the cupcake directions as listed on the back of the cake box.
  4. Fill liners 3/4 of the way and bake in the oven for 21 minutes.
  5. Remove cupcakes from the oven and allow to cool completely.
  6. Empty the bag of mini marshmallows into a large bowl.
  7. Begin making marshmallow “popcorn”.
  8. Using your scissors, snip the top half of each marshmallow 3 to 4 spots. ( Doing this will make them look like freshly popped popcorn kernels.)
  9. Set the prepped marshmallows aside.

Frosting Directions

Using a standing mixer, combine all ingredients until creamy and stiff peaks form.

Scoop into a piping bag with a medium star tip.

Pipe frosting onto the cupcakes.

Begin sticking the “popcorn” onto the frosting to make it look like a mound of “popcorn”

Once done sticking on the popcorn, spray spots yellow to make it look like butter.

Enjoy!

Circus or Carnival Themed Birthday Party Ideas

These cupcakes would also be perfect for a circus or carnival themed birthday party. For a carnival themed party you could set up game booths with tickets that kids can redeem for prizes. Serve hot dogs, hamburgers, corn dogs, cotton candy, funnel cakes, and popcorn cupcakes for carnival themed food.

For a circus themed party you could have a petting zoo, performers, and face painting. Serve animal crackers, cotton candy, fries, pizza, funnel cake, pretzels, lollipops, and popcorn cupcakes.
