    This Boudin King Cake recipe is a savory twist on the traditional Mardi Gras King Cake. Made with crescent rolls, boudin sausage and cheese filling, this dish is sure to be a hit at your next Mardi Gras celebration!

    It’s Carnival season where two beloved Louisiana delicacies, king cake and boudin, take center stage.

    While I have never made a traditional King Cake before, I have made a delicious alternative, a King Cake dip. If you haven’t given it a try, I highly recommend it.

    This recipe was a fun one to make and surely different from the traditional cake you have on Mardi Gras. It has gained popularity, especially among those in Louisiana searching for boudin, so I thought I would give it a try.

    My family gave it 2 thumbs up and we all agree that it is a keeper. So here goes the recipe!

    Boudin Cake Ingredients

    • Crescent roll dough – Either store or name brand will work and found in the refrigerated section of the grocery store. You can also use refrigerator croissant dough.
    • Boudin sausage – Use a well-made boudin sausage with a balanced blend of flavors. Homemade boudin sausage is the best choice but there are some good store options also.
    • Pepper jack cheese – You can use the prepackage shredded cheese or shred your own using a block of cheese and a grater.
    • Egg – You only need one beaten egg to use as an egg wash to give it that beautiful golden brown color when baked.
    • Jalapeno pepper jelly – Adjust the quantity based on your preferred level of heat and save extra for dipping sauce.
    • Bacon – I use microwave bacon to save on time.
    • Green onions – You will need one green onion to cut and add as a garnish. This is optional so if you don’t like onions you can leave it off.

    Variations & Substitutions

    • Make a boudin king crawfish cake using crawfish tails.
    • Can add some red pepper jelly inside the king cake for a sweet taste.
    • Swap bacon for fried cracklins or crushed pork rinds and sprinkle over top.
    • You can make a braided loaf using dough sheets.

    How to Make Boudin King Cake

    Preheat your oven to 375°F and line a baking sheet with parchment paper.

    Unroll the crescent roll dough on the prepared baking sheet, arranging the triangles in a circular pattern with some overlap. Position the wider ends inward and the pointed ends toward the sheet’s edge.

    Flatten the overlapping dough to ensure a seamless connection.

    Evenly spoon crumbled boudin sausage onto the wider part of the dough all the way around the ring of the dough.

    Sprinkle the shredded cheese over top the boudin sausage.

    Next, fold the pointed ends of the crescent roll dough over the filling, tucking them under the wider ends to create a “king cake” shape.

    Brush the dough’s surface with beaten egg.

    Bake for 25-30 minutes or until the crescent roll dough is golden brown and thoroughly cooked. If browning excessively, tent with aluminum foil.

    While the king cake cooks, microwave the pepper jelly for 10 to 15 seconds or until runny.

    Drizzle the jelly glaze over the pastry and sprinkle bacon crumbled and sliced green onions over top.

    Allow the Boudin King Cake to cool for a few minutes before slicing. Serve warm and enjoy!

    Allow to cool and store in an airtight container in the fridge for up to 3 days.

    Yes, you can make this ahead of time and store in the fridge if you’d like. Reheat in oven to desired temperature.

    Can I freeze boudin cake?

    Yes, you can freeze boudin cake without the sauce on top. Prepare per directions leaving off the sauce and wrap tightly in plastic and freezer safe bag or container. Store in freezer for up to 3 months. Thaw in fridge overnight, reheat in oven to desired temperature and add topping.

    Is it traditional to hide a baby figurine inside a Boudin King Cake?

    No, hiding a baby figurine inside a Boudin King Cake is not part of the traditional Mardi Gras tradition associated with King Cakes from New Orleans or Louisiana culture as it is generally done with regular King Cakes made from sweet yeast dough topped with colored icing and sugar sprinkles.

    • 3 cans crescent roll dough
    • 3 links about 1 pound boudin sausage, casing removed and crumbled
    • 1 cup shredded pepper jack cheese
    • 1 egg beaten (for egg wash)
    • ½ cup jalapeno pepper jelly plus additional for serving
    • ¼ cup cooked and crumbled bacon
    • 2 tablespoons sliced green onions

    Instructions
