My love for fried pickles all started when I tried one at a local restaurant. It was hard not to eat just one but being on a Keto diet I know I had to limit myself. I came home and wanted more but needed to think of a way to make them Keto-friendly. Pickles, eggs and pork rinds are all low carb so why not combine them to make fried pickles? GENIUS!
Can you air fry pickles? YES, you can. I used the Ninja Foodi and they ended up turning out amazing! For the dips, I used a few different ones. For a bit of kick, I had buffalo ranch and then for a more mild taste, I had regular ranch. While I used original pork rinds for the batter, you could also change up the flavor and use the spicy pork rinds flavor.
Air Fryer Fried Pickles
Ingredients
- 2 large eggs
- 1 bag of pork rinds
- Jar of sliced dill pickles
Instructions
- In a small bowl beat eggs together.
- Add pork rinds to the food processor and process until they resemble crumbs.
- Add the pork rinds crumbles to a separate bowl.
- Dip each pickle slice in the egg wash and then the pork rinds.
- Place each pickle slice in the air fryer basket in a single layer.
- Cook at 390 degrees F for 15-20 minutes or until golden brown.
- Serve hot with Buffalo Ranch or Regular Ranch dressing for dipping.
