    I’m obsessed with the peppermint swirl Minnie Mouse ears that are available at Disney during Christmas time so I had to make a replica but in cupcake form. If you love everything about Disney, including Mickey and Minnie Mouse, these Peppermint Pinwheel Minnie Mouse Cupcakes are perfect for you. Not just for kids, these cupcakes are bursting with flavor and are great to make for holiday gatherings.

    Peppermint Swirl Cupcakes

    When Disney is your thing, make the Peppermint Pinwheel Minnie Mouse Cupcakes that your loved ones will fall in love with from the moment they see them and taste them. Making the cupcakes is simple and starts with a box of French vanilla cake mix along with several other ingredients, such as sweet cream butter, eggs, and milk. After easily preparing the cupcakes and giving them time to cool, you can prepare the peppermint frosting and fondant swirl ears that will go on top.

    • If you don’t want to use French vanilla box cake mix, you can substitute for chocolate cake and that pairs nicely with peppermint.
    • Can make your own cupcakes from scratch if you are not a fan of box cake mix or don’t have any on hand.
    • Can substitute candy cane sprinkles with any holiday-themed sprinkles.
    • Make sure to make the fondant circles and bows the night before you make the cupcakes giving them enough time to dry out and harden.

    Fondant Ears and Bow (Start this step first)

    Ingredients

    1 package of white fondant
    1 package of green fondant
    1 Wilton fondant bow mold
    1 mini circle fondant cutter
    1 package of edible markers (Make sure there is a red edible marker)

    How to Make Fondant Minnie Mouse Ears & Bow

    Sprinkle some powder sugar onto a cutting board.

    Roll out the white fondant into ¼ inch thickness and cut out 48 circles of the white fondant for the ears and set aside to dry out overnight.

    Powder your hands with powder sugar and mold the green fondant into a ball. Pinch off 1 teaspoon size ball of fondant and press it into the larger bow size mold.

    Make 22 bows then set aside to dry out overnight.

    Next Day

    Using the red edible marker, draw out the lines of a peppermint candy. Color in the the lines of the candy to make the circles appear like a peppermint candy.

    Vanilla Cupcakes

    Ingredients

    Makes 22 cupcakes

    1 box of French vanilla cake mix
    3 large eggs, room temp
    ½ cup unsalted sweet cream butter, softened
    1 cup whole milk

    Will Also Need

    Christmas cupcake liners
    Cupcake pan

    How to Make Vanilla Cupcakes

    Preheat oven to 350 and line a cupcake pan with the cupcake liners.

    In a medium bowl, beat the cake mix, eggs, butter and milk until smooth and combined. Fill cupcake liners ¾ of the way full.

    Bake in the oven for about 21 minutes. Pull out the cupcakes and allow to cool before frosting.

    Peppermint Frosting

    Ingredients

    1 ½ cup unsalted sweet cream butter, softened
    4 ½ cup powdered sugar
    5-7 tbsp heavy whipping cream
    2 tsp pure vanilla extract

    Will Also Need

    1 large piping bag with large star tip
    1 container Wilton candy cane sprinkles
    2 containers crushed peppermint candy

    How to Make Peppermint Frosting

    Using a standing mixer combine the butter, powdered sugar, heavy whipping cream, peppermint and mix on medium speed until combined and smooth.

    Scoop the frosting into the piping bag.

    Mix the peppermint candy and candy cane sprinkles in a medium bowl.

    Decorating the Cupcakes

    Using the piping bag, pipe a thick wall of frosting around the edge of the cupcakes. Coat the frosting in the candy cane sprinkle mixture.

    Pipe a dollop of frosting into the middle. Carefully place a green bow in the center of the frosting. Carefully place two peppermint pinwheel ears on the sides of the bow.
