Sweets are my weakness! I try to limit the amount of sweets I have in a week to stay on track. Sometimes it doesn’t always go that go and my weekly limit may turn into one sweet treat a day. Fat bombs are my go to dessert when I get cravings because this girl needs her dessert! They are a delicious low carb treat that are small in size but so fulfilling.
It’s nice to have fat bombs on hand when you get a sweet tooth craving. Making a big batch of these ahead of time and keeping them on hand is a great way to stay on track. You can just pop one in your mouth and be satisfied versus something that is not healthy.

Mint Brownie Fat Bomb Ingredients
Makes 12 Fat Bombs
- Butter, softened
- Cream cheese, softened
- Unflavored whey powder
- Unsweetened cocoa powder
- Coconut flour
- Confectioner’s sweetener (Swerve or Lakanto)
- Vanilla extract
- Peppermint extract
- Liquid stevia
- Lily’s baking chocolate chips (or unsweetened dark chocolate chips)
How to Make Mint Brownie Fat Bombs
In a large mixing bowl using a hand mixer, beat butter and cream cheese until light and fluffy. Add sweeteners and extracts, then beat until combined.
Slowly beat in whey powder and cocoa powder on low for about 90 seconds. Add in coconut flour and beat for an additional 30 seconds. Gently fold in chocolate chips.
Cover bowl with lid or plastic wrap and refrigerate for 20 minutes. Prepare a baking sheet with parchment paper.
Remove from fridge and using a small cookie scoop, scoop batter into balls (about 1 tablespoon size) and place on parchment papered surface.
Place baking sheet in freezer for 15 minutes and serve.
How to Store Fat Bombs
To store, place in a covered container in the fridge or freezer. If placed in the freezer, allow to thaw out a few minutes before eating. Don’t leave out of the fridge or freezer for too long or they will melt.
