    Low Carb Three Cheese Pizza Casserole

    If you’re a cheese lover this low carb three cheese pizza casserole is going to be your favorite. It is layers upon layers of three different kinds of cheese with pepperoni and pizza sauce in between. The crust is not your normal type of pizza crust or made with keto bread. It’s a riced cauliflower crust dosed in olive oil and roasted to hold the casserole in place. 

    Low Carb Three Cheese Pizza Casserole

    The best part about this recipe is that you can choose the toppings you want. If you want to make it a supreme, have at it. I just added pepperoni as that is our household favorite. This dish can also be kept in the fridge for a few days afterwards for leftovers or even make a great freezer meal to heat up later.

    For this recipe I used Pirro’s pizza sauce. It is gluten free with all natural ingredients and low carb. I like Pirro’s pizza sauce because it has a great taste with a bit of spicy flavor. You can also use any other low carb pizza sauce for this recipe.

    Low Carb Three Cheese Pizza Casserole

    Ingredients

    Serves 12

    6 oz pepperoni
    12 oz riced cauliflower
    4 tbsp olive oil
    2 eggs
    1 jar of low carb pizza sauce (15 oz.)
    15 oz ricotta cheese (whole milk)
    16 oz shredded Mozzarella cheese
    6 oz shredded Parmesan cheese
    Italian seasoning
    Salt
    Pepper

    Directions

     

    Preheat oven to 425 degrees. Arrange riced cauliflower in a single layer in the casserole dish (I used a 9×12 casserole dish) toss with olive oil, salt and pepper. Roast for 25 minutes or until crisp.

    Remove the casserole dish from oven and turn oven down to 350 degrees. 

    In a bowl add ricotta cheese, eggs and sprinkle in a bit of parmesan cheese and mix together. This will help set up better in the casserole dish and be less watery.

    Use a ⅓ of each and add a layer of mozzarella cheese, then pizza sauce, then parmesan cheese, then ricotta. Sprinkle Italian seasoning on top. Next add a layer of pepperoni. Repeat.

    Layer in the rest of the cheese. Sprinkle with Italian seasoning and top with pepperoni. Cover with foil and bake at 325 degrees for 20 minutes.

    Remove foil and bake another 10 minutes. If you want the top crispier you can put under the broiler for a few minutes. 

    Let cool a few minutes and enjoy!

        You can use cream cheese, sour cream or any other kind of cheese you would like.
