One thing I struggle with is finding easy lunches to take to the office. I seem to eat the same thing over and over and that tends to get boring. I remembered when I was a kid my mom would make tuna salad and I enjoyed it. But back then it was just pretty plain with tuna, mayo and celery so I decided to play around with ingredients to make a more flavorful and filling recipe.

Keto Tuna Salad Lettuce Boats
2 pouches StarKist Selects E.V.O.O.® Yellowfin Tuna
2/3 cups celery, diced
1/2 white onion, diced
4 tbsp mayo (I used Sir Kensington’s)
2 hard boiled eggs, diced
12 pieces of bacon, crumbled
1 avocado, cut up
1 tbsp sweet relish with Splenda
Romaine lettuce hearts
Pepper to taste
Add StarKist Selects E.V.O.O.® Yellowfin Tuna, celery, mayo, sweet relish, onions, and pepper in a bowl and mix together.
Wash lettuce leaves and scoop mixture into each lettuce boat.
Top each lettuce boat with pieces of hard boiled eggs, bacon and avocado.
Add more pepper if you desire.

- 1 pouch StarKist Selects E.V.O.O.® Yellowfin Tuna
- 2/3 cups celery diced
- 4 tbsp mayo I used Sir Kensington's
- 2 hard boiled eggs diced
- Dash celery seed
- 12 pieces of bacon crumbled
- 1 avocado cut up
- 1 tbsp sweet relish
- Romaine lettuce hearts
- Salt and pepper to taste
- Add StarKist Selects E.V.O.O.® Yellowfin Tuna, celery, mayo, sweet relish, celery seed, salt, and pepper in a bowl and mix together.
- Wash lettuce leaves and scoop mixture into each lettuce boat.
