The whole family will enjoy this creamy garlic tuscan shrimp as it’s is rich in flavor of heavy cream, garlic and sun-dried tomatoes. And they might not even notice that it’s keto friendly at 6 net carbs per serving.
For this recipe I used some basic seasonings of Italian, parsley, salt and pepper but you could always make it spicy by adding some cayenne pepper and other seasoning. I also used fresh raw shrimp as I think it tastes better with fresh but you could also use frozen shrimp. Just make sure it is thawed out before you begin the recipe. Enjoy!
Keto Creamy Garlic Tuscan Shrimp
Serves 4
Ingredients
3 cloves garlic, finely diced
1 pound fresh raw shrimp, tails off
1/2 cup green onions, diced
1 cup sun-dried tomatoes (dried only, not in oil)
1 1/2 cups heavy cream
1/4 tsp salt
1/4 tsp pepper
5 cups baby spinach leaves
1/4 cup shredded Parmesan cheese
1/2 tsp Italian seasoning
1 tbsp parsley flakes
Olive oil
Directions
Heat a large skillet over medium-high heat. Add in olive oil and garlic and fry until fragrant (about one minute). Add in shrimp and cook for 2 minutes on each side or until cooked thoroughly and pink on both sides. Take shrimp out of pan and set aside.
In the same pan, add green onions and sun dried tomatoes. Cook for 1-2 minutes. Reduce to low-medium heat, add heavy cream and bring to a simmer, stirring occasionally. Add salt and pepper and stir.
Add spinach leaves in the same pan and cook till they wilt in the sauce. Then add Parmesan cheese and stir until cheese is melted. Add the shrimp to the pan and sprinkle with Italian seasoning and parsley, and stir.
Serve immediately alone or over zoodles, veggies or riced cauliflower.
