    Tips for Melting Chocolate

Melting chocolate is a pretty straightforward process, but it does have a few key points to remember. You can melt the chocolate using a double boiler if that is your preference (although it is not necessary).

    • Heat the chocolate slowly on low heat and stir constantly for even heating and to prevent burning.
    • Stir until you have a smooth, liquid consistency.
    • For the double boiler method, use a heavy saucepan so it’s easier to control and will conduct heat evenly.
    • Don’t use aluminum pans for melting chocolates with the double boiler method because high temperatures can cause metals to leach into your food.
    • Before starting the double boiler method, make sure your pot is clean and dry, to prevent any water from seeping into the chocolate (which can cause it to seize). Also, do not set your pan directly on top of steam, as it can cause the chocolate to seize.
    • If you have chunks of brown or gray bits in your melted chocolate, it means that your chocolate was either too hot or cool when you added the ingredients and they immediately started to solidify. The best solution is to start over by melting fresh chocolate.

    Chocolate Mice Ingredients

    15 Hershey kisses
    15 Red hots candies
    15 Maraschino cherries (WITH stems)
    ½ cup Chocolate chips
    30 Peanut halves
    Small tube of black icing

How to Make Chocolate Christmas Mice

Line a baking sheet with wax paper or lay wax paper on a flat surface.

Wash and place the cherries on a paper towel-lined plate and pat them dry to get as much moisture off of them as possible.

Add the chocolate chips to a bowl and melt according to package directions.

Holding the stem of a cherry, dip it into the melted chocolate. Place the chocolate coated cherry on it’s side on the wax paper. While the chocolate is still wet, press a Hershey kiss into the opposite side of the cherry from the stem.

Add two peanut halves in the top between the cherry and Hershey kiss for the mouse’s ears. You might need to add some melted chocolate at the top to hold the peanut halves. Allow chocolate to harden.

Add a dab of melted chocolate on the back of a red hot and place it on the end of the Hershey kiss for the mouse’s nose. Use the black icing to dot two eyes on the Hershey kiss to complete the mouse. Repeat this process with the remaining ingredients and allow to sit out till chocolate is harden.

Store in an airtight container until ready to serve.
