These Bomb Pop Cookies are the perfect mix of cute and tasty! Flavored with cherry and berry Jello, they’re a fun, festive treat for any red, white, and blue celebration.

Rocket popsicles were a summer staple growing up—I can still remember the thrill of chasing down the ice cream truck for one. Even now, I find myself grabbing a box at the grocery store because that sweet, tangy flavor is just too good to pass up.
With 4th of July right around the corner, I couldn’t resist recreating that childhood favorite in cookie form. These cookies were such a blast to make and were an instant hit with everyone who tried them!

Bomb Pop Cookie Ingredients
- Sugar: Granulated sugar and powdered sugar is both used.
- Wet Ingredients: Egg, vegetable oil, butter (softened at room temperature)
- Dry Ingredients: Flour, baking soda, salt, cream of tartar.
- Jello: Cherry and Berry Blue powder mix.
- Water: For the Jello mix.
- Food coloring: Red and blue to intensify the colors of the bomb pop.
- Popsicle sticks: Optional but a fun addition!
How to Make Bomb Pop Sugar Cookies
Mix the Wet Ingredients:
In a large bowl, beat together the sugar, powdered sugar, and butter using a hand mixer until light and fluffy (about 3–4 minutes). Add the oil and egg, and beat together until well combined.
Add the Dry Ingredients:
In a separate bowl, whisk together the flour, salt, baking soda, and cream of tartar. Gradually add the dry mixture to the wet mixture, one cup at a time, mixing on low to medium speed until a soft dough forms. You may need to finish mixing by hand if the dough gets too thick.
Divide the Dough:
Split the dough into three equal parts, placing each into a separate bowl.
Mix the Colors:
In one bowl, mix ½ teaspoon cherry Jello with ½ teaspoon water, and ½ teaspoon berry Jello with ½ teaspoon water in a separate bowl.
Add Color and Flavor:
Pour the cherry Jello mixture over one dough bowl and add red food coloring. Repeat with the berry Jello and blue food coloring for the second dough bowl. Leave the third dough bowl plain.
Knead the Dough:
(Optional: Wear gloves to avoid staining.) Knead each colored dough until fully blended, adding more dye if needed.
Shape the Dough Log:
Line a tray with parchment paper. Shape the plain dough into an 8–10 inch log and place it in the center of the tray. Shape the red dough into a log and place it on the left side of the plain dough. Repeat with the blue dough and place it on the right side.
Chill the Dough:
Wrap the entire tri-color dough log in plastic wrap and refrigerate for 30 minutes.
Preheat and Slice:
Preheat the oven to 350°F and line a baking sheet with parchment paper. Remove the dough from the fridge and slice it crosswise into ¼-inch thick pieces.
Add Popsicle Sticks (Optional):
Place a popsicle stick on the baking sheet and gently press a cookie slice on top. Use a fork to lightly press lines down the cookie to mimic the look of a Bomb Pop.
Bake and Cool:
Bake the cookies for 10–14 minutes. Let them cool completely before serving. Enjoy!
Helpful Tips and Variations
- If the dough gets too thick, mix it by hand.
- To add sticks, place cut cookies on the sheet and gently slide a stick underneath.
- Sticks are optional you can leave them out if you’d like.
- If you’re serving a crowd, double the batch or make smaller size cookies.
- Use parchment paper to prevent the dough from sticking to the counter.
- Don’t skip the chill time! This prevents the spreading of cookies during baking and is an extremely important step.
- Wear gloves if you have available to prevent hands from staining.
Storing Leftovers
Place leftovers in an airtight container on the counter for up to 4 days.
