    This Strawberry Cobbler is the perfect summer dessert made in one pan and baked to perfection with a soft, golden crust and sweet, tangy flavor.

    Strawberry desserts are always a favorite in our house, especially when strawberries are in season. I love stopping by the local farmers markets and picking up fresh berries to bake treats like strawberry shortcake trifle and strawberry pretzel salad, another summer classic right along with this easy strawberry cobbler.

    I usually top this cobbler with a scoop of vanilla ice cream, but honestly it’s just as delicious all on its own.

    If you love simple fruit desserts like this, also try my peach dump cake. It uses the same easy concept but swap strawberries for peaches and uses cake mix.

    Ingredients

    • Butter: Salted butter helps add richness and flavor to crust
    • Strawberries: Hulled, cut some in half and some quartered
    • Granulated sugar: For the cobbler and the crust
    • Flour: Creates the cobbler batter base
    • Will also need: Baking powder, salt, milk, and vanilla extract

    Helpful Tips

    • Use fresh strawberries for best flavor.
    • Don’t stir the layers after pouring the batter over the strawberries. The magic happens during baking.
    • Cut strawberries in mixed sizes so you get both soft pieces and chunkier bites.

    Variations

    • Add cinnamon: Stir ½ teaspoon cinnamon into the batter for a warm flavor twist.
    • Make it mixed berry: Swap half the strawberries for blueberries, raspberries, or blackberries.
    • Use brown sugar: Replace part of the sugar with brown sugar for a richer flavor.
    • Add lemon zest: A little lemon zest brightens the strawberry flavor beautifully.

    How to Make Strawberry Cobbler

    Step 1: Preheat your oven to 350℉. While the oven is preheating, add the butter to a 9×13 inch baking dish and place it in the oven to melt.

    Step 2: In a medium mixing bowl, combine the strawberries with 1 cup of sugar and stir gently to coat. Set aside.

    Step 3: In another mixing bowl, whisk together the flour, baking powder and salt. Add the milk, and vanilla extract, then whisk until a smooth batter forms.

    Step 4: Once the butter is melted, remove the baking dish from the oven and carefully spread the strawberry mixture evenly over the melted butter.

    Step 5: Pour the cobbler batter evenly over the strawberries. Do not stir.

    Step 6: Return the baking dish to the oven and bake for 30-35 minutes, or until the top is golden brown.

    Step 7: Serve warm with vanilla ice or Cool Whip on top.

    Storing Leftovers

    Place leftover strawberry cobbler in an airtight container in the refrigerator for up to 3 days.

    To reheat, warm individual portions in the microwave until warmed through, or place baking dish in the oven at 300℉ until heated through.

    Frequently Asked Questions

    Can I use frozen strawberries?

    I recommend using fresh strawberries but if frozen is all you have, thaw overnight in the fridge and make sure to drain all the liquid.

    Can I make this ahead of time?

    Yes, you can make this a day ahead. Allow to cool before storing in fridge and reheat before serving.

    Can I reduce the sugar?

    Yes, you can reduce the sugar slightly if your strawberries are very sweet.
