Strawberry Cobbler

This Strawberry Cobbler is the perfect summer dessert made in one pan and baked to perfection with a soft, golden crust and sweet, tangy flavor.

Ingredients

  • ½ cup salted butter
  • 3 cups strawberries tops removed, some halved and some quartered
  • ½ cup granulated sugar plus 1 tbsp., divided
  • 1 cup flour
  • 2 tsp. baking powder
  • ¼ tsp salt
  • 1 cup milk
  • ½ tsp vanilla extract

Instructions

  • Preheat your oven to 350℉.
  • While the oven is preheating, add the butter to a 9x13 inch baking dish and place it in the oven to melt.
  • In a medium mixing bowl, combine the strawberries with ½ cup of sugar and stir gently to coat. Set aside.
  • In another mixing bowl, whisk together the flour, baking powder and salt. Add the milk, vanilla, and 1 tbsp sugar, then whisk until a smooth batter forms.
  • Once the butter is melted, remove the baking dish from the oven and carefully spread the strawberry mixture evenly over the melted butter.
  • Pour the cobbler batter evenly over the strawberries. Do not stir.
  • Return the baking dish to the oven and bake for 30-35 minutes, or until the top is golden brown.
  • Serve warm with vanilla ice or Cool Whip on top.

Notes

Helpful Tips

  • Use fresh strawberries for best flavor.
  • Don't stir the layers after pouring the batter over the strawberries. The magic happens during baking.
  • Cut strawberries in mixed sizes so you get both soft pieces and chunkier bites.

Storing Leftovers

Place leftover strawberry cobbler in an airtight container in the refrigerator for up to 3 days.
To reheat, warm individual portions in the microwave until warmed through, or place baking dish in the oven at 300℉ until heated through.
